  5. 5. Pat the tomatoes dry with a kitchen towel.
  6. 6. Peel the garlic.
  7. 7. Slice the garlic thinly.
  8. 8. Rinse the thyme under running water.
  9. 9. Shake the thyme dry.
  10. 10. Chop the thyme leaves finely.
  11. 11. Layer the dried tomatoes, thyme, garlic, oregano, and wild fennel seeds in a jar.
  12. 12. Fill the jar with olive oil.
  13. 13. Store the dried tomatoes in a tightly sealed container in a cool, dark place.
