Ingredients
- 75 g dried tomatoes
- 3 garlic cloves
- 4 sprigs thyme
- 0.5 tsp dried oregano
- 0.5 tsp wild fennel seeds
- olive oil (to top up)
Instructions
- 1. Place the dried tomatoes in a bowl.
- 2. Pour hot water over them.
- 3. Let the tomatoes soak for about 1 hour.
- 4. Drain the water.
- 5. Pat the tomatoes dry with a kitchen towel.
- 6. Peel the garlic.
- 7. Slice the garlic thinly.
- 8. Rinse the thyme under running water.
- 9. Shake the thyme dry.
- 10. Chop the thyme leaves finely.
- 11. Layer the dried tomatoes, thyme, garlic, oregano, and wild fennel seeds in a jar.
- 12. Fill the jar with olive oil.
- 13. Store the dried tomatoes in a tightly sealed container in a cool, dark place.
