  2. 2. Pat the apples dry with a clean kitchen towel.
  3. 3. Cut the apples into four equal quarters.
  4. 4. Remove the core from the apple quarters.
  5. 5. Slice the apple quarters into very thin rounds.
  6. 6. Line two baking sheets with parchment paper.
  7. 7. Arrange the apple slices evenly on the trays.
  8. 8. Coat the slices with cinnamon.
  9. 9. Preheat the oven to 80 degrees Celsius convection.
  10. 10. Place the trays in the preheated oven.
  11. 11. Wedge a wooden spoon into the oven door to keep it slightly ajar.
  12. 12. Dry the chips in the oven for about four hours.
  13. 13. Remove the trays from the oven.
  14. 14. Let the chips cool down completely.
