🍽️ Mashed Potatoes with Smoked Trout

Ingredients
- 600 g floury potatoes
- 1 cucumber
- 1 shallot
- 4 tbsp olive oil
- 100 ml milk
- 1 handful sorrel
- 4 smoked trout fillets à approx. 120 g (skinless)
- sorrel (for garnishing)
Instructions
- 1. Wash the potatoes thoroughly.
- 2. Steam the potatoes for about 30 minutes until they are cooked through.
- 3. Peel the cucumber.
- 4. Cut off the ends of the cucumber.
- 5. Halve the cucumber lengthwise.
- 6. Remove the seeds from the cucumber halves.
- 7. Slice the cucumber.
- 8. Peel the shallot.
- 9. Finely dice the shallot.
- 10. Heat 2 tablespoons of oil in a pan.
- 11. Add the shallots and cucumber slices to the hot oil.
- 12. Sauté the vegetables for 2 to 3 minutes until they lose their color.
- 13. Remove the pan from the heat.
- 14. Let the vegetables rest in the pan.
- 15. Peel the cooked potatoes.
- 16. Mash the potatoes roughly.
- 17. Add the remaining oil to the mash.
- 18. Add the hot milk to the mash.
- 19. Fold the sautéed cucumbers into the mash.
- 20. Blanch the sorrel briefly in boiling water.
- 21. Pat the sorrel dry.
- 22. Remove the stems from the sorrel.
- 23. Cut the sorrel leaves into thin strips.
- 24. Fold the sorrel strips into the mash.
- 25. Season the mash with salt and pepper.
- 26. Divide the mash onto the plates.
- 27. Place a trout fillet on each portion of mash.
- 28. Lightly pepper the trout.
- 29. Garnish the dish with fresh sorrel.
- 30. Serve the dish.
