  2. 2. Steam the potatoes for about 30 minutes until they are cooked through.
  3. 3. Peel the cucumber.
  4. 4. Cut off the ends of the cucumber.
  5. 5. Halve the cucumber lengthwise.
  6. 6. Remove the seeds from the cucumber halves.
  7. 7. Slice the cucumber.
  8. 8. Peel the shallot.
  9. 9. Finely dice the shallot.
  10. 10. Heat 2 tablespoons of oil in a pan.
  11. 11. Add the shallots and cucumber slices to the hot oil.
  12. 12. Sauté the vegetables for 2 to 3 minutes until they lose their color.
  13. 13. Remove the pan from the heat.
  14. 14. Let the vegetables rest in the pan.
  15. 15. Peel the cooked potatoes.
  16. 16. Mash the potatoes roughly.
  17. 17. Add the remaining oil to the mash.
  18. 18. Add the hot milk to the mash.
  19. 19. Fold the sautéed cucumbers into the mash.
  20. 20. Blanch the sorrel briefly in boiling water.
  21. 21. Pat the sorrel dry.
  22. 22. Remove the stems from the sorrel.
  23. 23. Cut the sorrel leaves into thin strips.
  24. 24. Fold the sorrel strips into the mash.
  25. 25. Season the mash with salt and pepper.
  26. 26. Divide the mash onto the plates.
  27. 27. Place a trout fillet on each portion of mash.
  28. 28. Lightly pepper the trout.
  29. 29. Garnish the dish with fresh sorrel.
  30. 30. Serve the dish.
