🍽️ Zurich-style Sliced Meat: Juicy and Creamy

Ingredients
- 1 onion
- 750 g veal (from the round or leg)
- butterfat (for frying)
- 1 tbsp flour
- 125 ml dry white wine
- 125 ml veal stock
- 200 ml whipping cream
- 3 sprigs parsley
- 1 drop lemon juice
- salt
- pepper (from the mill)
Instructions
- 1. Peel the onion and cut it into fine cubes.
- 2. Rinse the meat briefly and pat it dry with a kitchen towel.
- 3. Slice the meat into slices first, then cut them into strips about 1 cm thick.
- 4. Heat ghee (clarified butter) in a pan.
- 5. Brown the meat strips in batches.
- 6. Remove the browned meat from the pan and set it aside.
- 7. Fry the onion cubes in the remaining pan juices until golden brown.
- 8. Sprinkle the flour over the onions and stir briefly.
- 9. Deglaze the mixture with wine and bring it to a boil.
- 10. Reduce the heat and let the sauce simmer briefly with the meat stock.
- 11. Add the cream and let the sauce thicken slightly for a few minutes.
- 12. Return the meat strips and their juices to the pan.
- 13. Let the meat simmer on low heat for 2 to 3 minutes until cooked through.
- 14. Rinse the parsley and shake it dry.
- 15. Pluck the parsley leaves and chop them finely.
- 16. Season the sliced meat with lemon juice, salt, and pepper.
- 17. Sprinkle the finished dish with parsley and serve.
