  1. 1. Rinse the meat under cold water and pat it completely dry with a kitchen towel.
  2. 2. Cut the meat into slices approximately 1 cm thick.
  3. 3. Peel the ginger and garlic clove and chop both ingredients very finely.
  4. 4. Trim the spring onions, wash them, and slice them into thin rings.
  5. 5. Wash the fresh coriander and shake off excess water.
  6. 6. Heat 2 tablespoons of oil in a large frying pan.
  7. 7. Sear the meat on both sides over high heat for 2 to 3 minutes each.
  8. 8. Remove the meat from the pan and keep it warm.
  9. 9. Wash the apples, quarter them, remove the core, and cut the flesh into thin wedges.
  10. 10. Heat 1 tablespoon of oil in the same pan and fry the apple wedges for 2 minutes over medium heat.
  11. 11. Add the spring onions and fry them together for 1 minute.
  12. 12. Remove the apple and onion mixture from the pan and set it aside.
  13. 13. Cook the rice noodles in plenty of boiling salted water according to package instructions until al dente.
  14. 14. Add the remaining oil to the pan.
  15. 15. Sauté the finely chopped garlic and ginger for 2 minutes over medium heat.
  16. 16. Stir in the curry powder and sauté it for 1 minute.
  17. 17. Deglaze the pan with lime juice and soy sauce.
  18. 18. Season the sauce with black pepper and cayenne pepper.
  19. 19. Bring the sauce to a boil for 1 minute.
  20. 20. Remove the pan from the heat.
  21. 21. Return the seared meat to the pan and toss it in the sauce.
  22. 22. Drain the rice noodles and let them drip dry for a moment.
  23. 23. Portion the rice noodles onto plates.
  24. 24. Distribute the meat and apple wedges over the noodles.
  25. 25. Garnish the dish with fresh coriander leaves.
