🍽️ Quick Pork Strudel with Apples and Rice Noodles

Ingredients
- 500 g Turkey cutlets
- 20 g Ginger (1 piece)
- 2 Garlic cloves
- 1 bunch Spring onions
- 5 g Coriander (4 stalks)
- 4 tbsp Peanut oil
- 2 Apples
- 200 g wide rice noodles
- 0.5 tsp Curry powder
- 3 tbsp Lime juice
- 3 tbsp Soy sauce
- Pepper
- Cayenne pepper
Instructions
- 1. Rinse the meat under cold water and pat it completely dry with a kitchen towel.
- 2. Cut the meat into slices approximately 1 cm thick.
- 3. Peel the ginger and garlic clove and chop both ingredients very finely.
- 4. Trim the spring onions, wash them, and slice them into thin rings.
- 5. Wash the fresh coriander and shake off excess water.
- 6. Heat 2 tablespoons of oil in a large frying pan.
- 7. Sear the meat on both sides over high heat for 2 to 3 minutes each.
- 8. Remove the meat from the pan and keep it warm.
- 9. Wash the apples, quarter them, remove the core, and cut the flesh into thin wedges.
- 10. Heat 1 tablespoon of oil in the same pan and fry the apple wedges for 2 minutes over medium heat.
- 11. Add the spring onions and fry them together for 1 minute.
- 12. Remove the apple and onion mixture from the pan and set it aside.
- 13. Cook the rice noodles in plenty of boiling salted water according to package instructions until al dente.
- 14. Add the remaining oil to the pan.
- 15. Sauté the finely chopped garlic and ginger for 2 minutes over medium heat.
- 16. Stir in the curry powder and sauté it for 1 minute.
- 17. Deglaze the pan with lime juice and soy sauce.
- 18. Season the sauce with black pepper and cayenne pepper.
- 19. Bring the sauce to a boil for 1 minute.
- 20. Remove the pan from the heat.
- 21. Return the seared meat to the pan and toss it in the sauce.
- 22. Drain the rice noodles and let them drip dry for a moment.
- 23. Portion the rice noodles onto plates.
- 24. Distribute the meat and apple wedges over the noodles.
- 25. Garnish the dish with fresh coriander leaves.
