  6. 6. Remove the seared meat from the pan and set it aside.
  7. 7. Add the shallots to the hot pan and sauté them briefly.
  8. 8. Sprinkle flour over the shallots.
  9. 9. Deglaze the pan with wine and bring it to a boil.
  10. 10. Stir in the meat broth and the cream.
  11. 11. Let the sauce simmer until it thickens slightly and becomes creamy.
