🍽️ Veal Slices in Creamy Onion Sauce

Ingredients
- 500 g shallots
- 750 g veal (from the round or leg)
- ghee (for frying)
- 1 tbsp flour
- 100 ml dry white wine
- 150 ml meat broth
- 200 ml whipping cream
- salt
- lemon juice
- pepper (from the mill)
- chopped parsley (for garnishing)
Instructions
- 1. Peel the shallots and cut them into quarters.
- 2. Wash the veal and pat it dry with a kitchen towel.
- 3. Cut the meat into thin strips.
- 4. Heat ghee (clarified butter) in a large frying pan.
- 5. Sear the meat strips in batches over high heat.
- 6. Remove the seared meat from the pan and set it aside.
- 7. Add the shallots to the hot pan and sauté them briefly.
- 8. Sprinkle flour over the shallots.
- 9. Deglaze the pan with wine and bring it to a boil.
- 10. Stir in the meat broth and the cream.
- 11. Let the sauce simmer until it thickens slightly and becomes creamy.
- 12. Add the meat back into the sauce.
- 13. Let everything simmer together gently for 6 to 8 minutes.
- 14. Season the sauce to taste with salt, lemon juice, and pepper.
- 15. Sprinkle chopped parsley over the dish.
- 16. Serve the dish hot.
