  1. 1. Season the kid goat pieces generously with salt and pepper.
  2. 2. Lightly dust the meat pieces with flour.
  3. 3. Peel the shallots and leave them whole.
  4. 4. Peel the garlic and slice it into thin rounds.
  5. 5. Heat 3 tablespoons of oil in a large pan.
  6. 6. Sear the meat pieces on both sides until browned.
  7. 7. Remove the meat from the pan and set it aside.
  8. 8. Add the whole shallots to the remaining fat in the pan.
  9. 9. Sauté the shallots briefly.
  10. 10. Add the garlic slices.
  11. 11. Cook everything until it takes on a light color.
  12. 12. Return the kid goat to the pan.
  13. 13. Pour in half of the wine.
  14. 14. Add bay leaves, a cinnamon stick, cloves, and dried thyme.
  15. 15. Cover the pan.
  16. 16. Braise the meat on low heat for about 1 hour.
  17. 17. Gradually pour in the remaining wine.
  18. 18. Blanch the tomatoes by pouring boiling water over them.
  19. 19. Peel the skin off the tomatoes.
  20. 20. Quarter the tomatoes and remove the core.
  21. 21. Cut the flesh into small cubes.
  22. 22. Add the tomato cubes to the meat after 1 hour.
  23. 23. Simmer the dish for another 30 minutes.
  24. 24. Season to taste with vinegar, salt, and pepper.
  25. 25. Sprinkle the finished dish with fresh thyme.
  26. 26. Serve the kid goat hot.
