🍽️ Braised Kid Goat Stew with Wine and Spices

Ingredients
- 1 kg kid goat (divided into approx. 8 portion pieces)
- salt
- pepper from the mill
- 1 tbsp flour
- 500 g shallots
- 4 garlic cloves
- olive oil
- 250 ml red wine
- 2 bay leaves
- 1 cinnamon stick
- 3 cloves
- 1 tsp dried thyme
- 500 g tomatoes
- 1 tbsp red wine vinegar
- 2 tbsp fresh thyme leaves (chopped)
Instructions
- 1. Season the kid goat pieces generously with salt and pepper.
- 2. Lightly dust the meat pieces with flour.
- 3. Peel the shallots and leave them whole.
- 4. Peel the garlic and slice it into thin rounds.
- 5. Heat 3 tablespoons of oil in a large pan.
- 6. Sear the meat pieces on both sides until browned.
- 7. Remove the meat from the pan and set it aside.
- 8. Add the whole shallots to the remaining fat in the pan.
- 9. Sauté the shallots briefly.
- 10. Add the garlic slices.
- 11. Cook everything until it takes on a light color.
- 12. Return the kid goat to the pan.
- 13. Pour in half of the wine.
- 14. Add bay leaves, a cinnamon stick, cloves, and dried thyme.
- 15. Cover the pan.
- 16. Braise the meat on low heat for about 1 hour.
- 17. Gradually pour in the remaining wine.
- 18. Blanch the tomatoes by pouring boiling water over them.
- 19. Peel the skin off the tomatoes.
- 20. Quarter the tomatoes and remove the core.
- 21. Cut the flesh into small cubes.
- 22. Add the tomato cubes to the meat after 1 hour.
- 23. Simmer the dish for another 30 minutes.
- 24. Season to taste with vinegar, salt, and pepper.
- 25. Sprinkle the finished dish with fresh thyme.
- 26. Serve the kid goat hot.
