Ingredients
- 1.25 kg Kassler rolled roast (kitchen-ready prepared)
- Salt
- Pepper (from the mill)
- 3 tbsp Oil (for frying)
- 2 Carrots
- 1 Onion
- 1 tsp freshly chopped thyme leaves
- 1 Bay leaf
- 0.5 tsp Caraway seeds
- 250 ml dry white wine
- 250 ml meat broth
Instructions
- 1. Generously pepper the meat.
- 2. Heat the oil in a casserole dish.
- 3. Sear the meat on all sides.
- 4. Peel the carrots.
- 5. Peel the onions.
- 6. Dice the vegetables into small cubes.
- 7. Add the vegetables to the meat.
- 8. Sauté the vegetables briefly.
- 9. Add thyme, bay leaves, and cumin.
- 10. Deglaze with wine.
- 11. Add broth.
- 12. Lightly season the sauce with salt.
- 13. Preheat the oven to 200 degrees.
- 14. Place the casserole on the lower rack.
- 15. Braise the meat covered for about 1 hour.
- 16. Ladle the meat with the pan juices occasionally.
- 17. Serve the meat with the vegetables.
- 18. Serve boiled potatoes or mashed potatoes on the side.
