  1. 1. Rinse the chicken thighs and wings under running water.
  2. 2. Thoroughly pat the meat dry with a kitchen towel.
  3. 3. Peel the onions and slice them into thin rings.
  4. 4. Cut the pumpkin flesh into small, even cubes.
  5. 5. Season the chicken pieces generously with salt and pepper.
  6. 6. Heat oil in a large casserole dish or pot.
  7. 7. Sear the chicken on all sides until golden brown.
  8. 8. Remove the seared chicken from the pot and set it aside.
  9. 9. Add the onion rings and pumpkin cubes to the hot fat.
  10. 10. Sauté the vegetables briefly until fragrant.
  11. 11. Deglaze the mixture with white wine.
  12. 12. Stir cinnamon and saffron into the vegetables.
  13. 13. Place the chicken pieces back on top of the vegetables.
  14. 14. Brush the chicken lightly with honey.
  15. 15. Season again with a pinch of salt and pepper.
  16. 16. Cover the pot and simmer the chicken on low heat for about 35 minutes.
  17. 17. Add a little more white wine if necessary, as the liquid evaporates too quickly.
  18. 18. Taste the dish at the end and adjust seasoning with salt and pepper.
  19. 19. Sprinkle sesame seeds over the finished dish and serve hot.
