🍽️ Tender Beef Stew with Plantains

Ingredients
- 800 g beef shoulder (boneless)
- 2 onions
- 2 garlic cloves
- 1 stalk lemongrass
- 1 green chili pepper
- 3 tbsp rapeseed oil
- 1 tsp whole wheat flour
- 600 ml meat broth
- 2 bay leaves
- 2 star anise
- salt
- pepper
- 3 tomatoes
- 500 g plantain (Asian market)
- 150 ml coconut milk
- 4 tbsp lime juice
- 1 tsp whole cane sugar
- 2 tbsp chive rings (5 g each)
Instructions
- 1. Rinse the beef under cold water.
- 2. Pat the meat dry with a kitchen towel.
- 3. Cut the meat into cubes of about 2 to 3 centimeters.
- 4. Peel the onions and garlic.
- 5. Finely dice the onions and garlic.
- 6. Clean the lemongrass and wash it.
- 7. Finely chop the lemongrass.
- 8. Halve the chili pepper lengthwise.
- 9. Remove the seeds from the chili pepper.
- 10. Rinse the chili pepper.
- 11. Finely chop the chili pepper.
- 12. Heat the oil in a casserole dish or a large pot.
- 13. Sear the meat on all sides over high heat.
- 14. Cook the meat for about 5 minutes.
- 15. Add the diced onions and garlic to the meat.
- 16. Sauté the vegetables for 2 to 3 minutes.
- 17. Dust the meat with flour.
- 18. Cook the flour for 1 minute.
- 19. Pour in the beef broth.
- 20. Add the lemongrass to the meat.
- 21. Add the chili pepper to the meat.
- 22. Add the bay leaves to the meat.
- 23. Add the star anise to the meat.
- 24. Season the dish with salt to taste.
- 25. Season the dish with pepper to taste.
- 26. Cover the pot with a lid.
- 27. Preheat the oven to 200 degrees Celsius.
- 28. Set the fan-assisted heat to 180 degrees Celsius.
- 29. Set the gas mark to 3.
- 30. Simmer the meat in the oven.
- 31. Simmer the meat for about 1 hour.
- 32. Add more broth if necessary.
- 33. Wash the tomatoes.
- 34. Score the tomatoes in a cross shape at the bottom.
- 35. Blanch the tomatoes with boiling water.
- 36. Leave the tomatoes in the water for a few seconds.
- 37. Shock the tomatoes with cold water.
- 38. Peel the skin off the tomatoes.
- 39. Dice the tomatoes finely.
- 40. Remove the seeds from the tomatoes.
- 41. Remove the stem ends from the tomatoes.
- 42. Peel the plantains.
- 43. Slice the plantains.
- 44. Make the slices about 1 to 2 centimeters thick.
- 45. Add the plantain slices to the meat.
- 46. Add the tomatoes to the meat.
- 47. Pour in the coconut milk.
- 48. Cook the dish in the oven without the lid.
- 49. Cook the dish for 45 to 60 minutes.
- 50. Remove the bay leaves from the dish.
- 51. Remove the star anise from the dish.
- 52. Season the dish with salt.
- 53. Season the dish with pepper.
- 54. Add lime juice to the dish.
- 55. Add sugar to the dish.
- 56. Sprinkle the dish with chives.
