🍽️ Aromatic Anis Chicken with Potatoes

Ingredients
- 250 g small onions
- 400 g small potatoes
- 4 sprigs rosemary
- 4 stems sage
- 1.5 kg chicken (ready for cooking, 1 chicken)
- salt
- pepper
- 5 garlic cloves
- 1 tsp anise
- 200 ml Mediterranean vegetable broth
- 50 ml anise liqueur
- 125 ml dry white wine
Instructions
- 1. Peel the onions and cut them in half.
- 2. Peel the potatoes and wash them thoroughly.
- 3. Wash the herbs and shake off the excess water.
- 4. Rinse the chicken under cold water and pat it dry inside and out with kitchen paper.
- 5. Season the chicken inside and out with salt and pepper.
- 6. Peel the garlic.
- 7. Take half of the herbs and the anise.
- 8. Fill the garlic, herbs, and anise into the cavity of the chicken.
- 9. Place the chicken in a roasting pan.
- 10. Arrange the onions and potatoes around the chicken.
- 11. Pour in the broth.
- 12. Preheat the oven to 200 degrees (180 degrees for fan-assisted or gas mark 3).
- 13. Place the roasting pan on the lowest rack.
- 14. Roast the chicken for about 1 hour and 15 minutes.
- 15. After half the time, pour in the anis liqueur and the wine.
- 16. Add the remaining herbs.
- 17. Take the chicken out of the oven.
- 18. Wrap the chicken in aluminum foil.
- 19. Let the meat rest for a few minutes.
- 20. Defat the roasting juices if necessary.
- 21. Season the sauce and vegetables with salt and pepper to taste.
- 22. Plate the chicken, onions, potatoes, and sauce.
