  1. 1. Peel the onions and cut them in half.
  2. 2. Peel the potatoes and wash them thoroughly.
  3. 3. Wash the herbs and shake off the excess water.
  4. 4. Rinse the chicken under cold water and pat it dry inside and out with kitchen paper.
  5. 5. Season the chicken inside and out with salt and pepper.
  6. 6. Peel the garlic.
  7. 7. Take half of the herbs and the anise.
  8. 8. Fill the garlic, herbs, and anise into the cavity of the chicken.
  9. 9. Place the chicken in a roasting pan.
  10. 10. Arrange the onions and potatoes around the chicken.
  11. 11. Pour in the broth.
  12. 12. Preheat the oven to 200 degrees (180 degrees for fan-assisted or gas mark 3).
  13. 13. Place the roasting pan on the lowest rack.
  14. 14. Roast the chicken for about 1 hour and 15 minutes.
  15. 15. After half the time, pour in the anis liqueur and the wine.
  16. 16. Add the remaining herbs.
  17. 17. Take the chicken out of the oven.
  18. 18. Wrap the chicken in aluminum foil.
  19. 19. Let the meat rest for a few minutes.
  20. 20. Defat the roasting juices if necessary.
  21. 21. Season the sauce and vegetables with salt and pepper to taste.
  22. 22. Plate the chicken, onions, potatoes, and sauce.
