🍽️ Tender Octopus in Wine Sauce

Ingredients
- 600 g kitchen-ready cleaned octopus
- salt
- 1 onion
- 1 bunch parsley
- 4 tbsp olive oil
- 200 ml white wine
- 1 clove garlic
- pepper from the mill
Instructions
- 1. Rinse the octopus thoroughly under running water.
- 2. Place the wet octopus in a deep pan.
- 3. Sprinkle some salt over it.
- 4. Braise the octopus for about 15 minutes in its own juices.
- 5. Turn the octopus once during the cooking process.
- 6. Rinse the octopus with lukewarm water afterwards.
- 7. Let the octopus drain well.
- 8. Cut the octopus into bite-sized pieces.
- 9. Peel the onion and dice it.
- 10. Rinse the parsley under running water.
- 11. Set aside a few parsley leaves for garnish.
- 12. Finely chop the rest of the parsley.
- 13. Heat olive oil in a pot.
- 14. Fry the octopus pieces in it for 1 to 2 minutes.
- 15. Turn the pieces occasionally while frying.
- 16. Add the onion cubes and the chopped parsley to the pot.
- 17. Deglaze the mixture with wine.
- 18. Peel the garlic.
- 19. Press the garlic directly into the pot.
- 20. Cover the pot.
- 21. Simmer the octopus for about 60 minutes over low heat.
- 22. Season the dish to taste with salt and pepper.
- 23. Garnish the octopus with the reserved parsley leaves.
- 24. Plate the octopus and serve.
