🍽️ Sweet and Sour Pearl Onions

Ingredients
- 300 g fresh pearl onions
- 2 tbsp olive oil
- 2 tbsp honey (e.g. chestnut honey)
- 5 tbsp balsamic vinegar (balsamic)
- 100 ml Marsala (or non-alcoholic red wine)
- 100 ml poultry broth
- salt
- pepper
Instructions
- 1. Place the pearl onions in a bowl.
- 2. Pour boiling water over them.
- 3. Let them sit for ten minutes.
- 4. Rinse the onions under cold water.
- 5. Peel the onions carefully.
- 6. Do not cut off the root ends so the onions do not fall apart during cooking.
- 7. Heat the oil in a non-stick pan.
- 8. Lightly fry the onions all around in it.
- 9. Shake the pan frequently while doing so.
- 10. Make sure they only brown very gently.
- 11. Add the honey to the pan.
- 12. Let the honey caramelize briefly.
- 13. Deglaze the pan with the balsamic vinegar.
- 14. Add the Marsala wine.
- 15. Pour in the broth.
- 16. Cover the pan.
- 17. Simmer the onions over medium heat for 15 to 20 minutes.
- 18. Remove the lid.
- 19. Continue cooking the onions in the open pot.
- 20. Stir frequently while doing so.
- 21. Cook until the sauce is thick.
- 22. Season the onions with salt and pepper.
- 23. Serve the onions lukewarm.
