  1. 1. Preheat the oven to 160 degrees Celsius. Set the heating mode to top and bottom heat.
  2. 2. Pound the meat flat using a meat mallet.
  3. 3. Season the meat with a little salt and pepper.
  4. 4. Spread a thin layer of mustard over the meat.
  5. 5. Cut the pickles into long, stick-like pieces.
  6. 6. Place two slices of bacon and a few pickle pieces onto the meat.
  7. 7. Roll the meat up tightly.
  8. 8. Tie the roll securely with kitchen twine.
  9. 9. Coat the roulades briefly in flour.
  10. 10. Brown the roulades on all sides in hot oil in a casserole dish.
  11. 11. Stir the tomato paste and paprika powder into the fat.
  12. 12. Deglaze the mixture with red wine.
  13. 13. Pour in the broth and scrape up the browned bits from the bottom of the pot.
  14. 14. Peel the carrots and dice them finely.
  15. 15. Peel the shallots and slice them.
  16. 16. Add the carrots and shallots to the meat in the pot.
  17. 17. Cover the pot and place it in the preheated oven.
  18. 18. Braise the roulades for 60 to 70 minutes.
