🍽️ Classic Braised Rouladen

Ingredients
- 640 g beef roulade (4 slices)
- salt
- pepper (from the mill)
- 1 tbsp sharp mustard
- 8 small gherkins
- 8 slices smoked ham
- 1 tbsp flour
- 2 tbsp vegetable oil
- 1 tbsp tomato paste
- 1 tbsp paprika powder (sweet)
- 200 ml dry red wine
- 400 ml meat broth
- 2 carrots
- 3 shallots
- 2 tbsp capers
Instructions
- 1. Preheat the oven to 160 degrees Celsius. Set the heating mode to top and bottom heat.
- 2. Pound the meat flat using a meat mallet.
- 3. Season the meat with a little salt and pepper.
- 4. Spread a thin layer of mustard over the meat.
- 5. Cut the pickles into long, stick-like pieces.
- 6. Place two slices of bacon and a few pickle pieces onto the meat.
- 7. Roll the meat up tightly.
- 8. Tie the roll securely with kitchen twine.
- 9. Coat the roulades briefly in flour.
- 10. Brown the roulades on all sides in hot oil in a casserole dish.
- 11. Stir the tomato paste and paprika powder into the fat.
- 12. Deglaze the mixture with red wine.
- 13. Pour in the broth and scrape up the browned bits from the bottom of the pot.
- 14. Peel the carrots and dice them finely.
- 15. Peel the shallots and slice them.
- 16. Add the carrots and shallots to the meat in the pot.
- 17. Cover the pot and place it in the preheated oven.
- 18. Braise the roulades for 60 to 70 minutes.
