🍽️ Braised Gold Bream

Ingredients
- 3 garlic cloves
- 1 red chili pepper
- 2 tsp chopped thyme
- 2 tsp chopped rosemary
- 2 tsp chopped sage
- 6 tbsp olive oil
- salt
- 1 kg gold bream (1 gold bream), ready for cooking
- 1 green bell pepper
- 2 tomatoes
- 1 firm-cooking potato
- 1 onion
- 1 bunch arugula (approx. 30 g)
- pepper (from the mill)
Instructions
- 1. Peel the garlic and press it through a garlic press.
- 2. Wash the chili peppers, remove the stem and seeds, and chop them finely.
- 3. Mix the garlic, chili peppers, herbs, 5 tablespoons of oil, and a pinch of salt in a bowl.
- 4. Wash the fish and pat it dry inside and out with kitchen paper.
- 5. Coat the fish inside and out with the herb marinade.
- 6. Let the fish marinate for approx. 1 hour.
- 7. Wash the bell peppers, remove the stem, seeds, and white inner membranes.
- 8. Cut the bell peppers into thin strips.
- 9. Wash the tomatoes, cut them into quarters, and remove the seeds.
- 10. Dice the seeded tomatoes finely.
- 11. Peel the potato and dice it finely as well.
- 12. Peel the onion and chop it finely.
- 13. Add the onions to hot oil and sauté until translucent.
- 14. Wash the arugula and remove coarse stems.
- 15. Dry the arugula in a salad spinner.
- 16. Roughly tear the arugula with your hands.
- 17. Add the arugula to the vegetables in the pan.
- 18. Season the vegetables with salt and pepper.
- 19. Stuff the fish with the vegetables.
- 20. Fry the fish on the outside until golden brown.
