  2. 2. Clean the gold bream fillets and pat them dry.
  3. 3. Season the fillets with a little salt and pepper.
  4. 4. Heat one tablespoon of oil in a frying pan.
  5. 5. Sear the fillets briefly on both sides.
  6. 6. Place the seared fillets into a baking dish.
  7. 7. Finely grate the zest of one lemon.
  8. 8. Sprinkle the lemon zest over the fish.
  9. 9. Pour the remaining oil over the fillets.
  10. 10. Add the tomatoes and olives to the dish.
  11. 11. Cover the baking dish with a lid.
  12. 12. Braise the gold bream in the oven for about 20 minutes.
  13. 13. Garnish the finished dish with fresh basil.
