🍽️ Tender Artichokes in Orange Broth

Ingredients
- 2 organic oranges
- 2 organic lemons
- 2 red onions
- 8 small artichokes (for braising)
- 2 tbsp olive oil
- 2 sprigs basil
- 250 ml vegetable broth
- salt
- 6 black peppercorns
Instructions
- 1. Rinse the oranges under hot water and dry them.
- 2. Peel the thin skin from both oranges using a vegetable peeler.
- 3. Squeeze both oranges and collect the juice.
- 4. Squeeze the lemons.
- 5. Add the lemon juice and about 2 liters of water to a large bowl.
- 6. Peel the onions.
- 7. Cut the onions into thin strips.
- 8. Remove the tough outer leaves from the artichokes.
- 9. Peel the stems of the artichokes generously with a vegetable peeler.
- 10. Quarter the artichokes.
- 11. Remove the fuzzy choke from the flower base.
- 12. Place the prepared artichokes immediately into the lemon water mixture.
- 13. This prevents them from turning brown.
- 14. Heat the oil in a pot.
- 15. Sauté the onion strips until translucent.
- 16. Rinse the basil.
- 17. Shake the basil dry.
- 18. Add the basil to the onion vegetables.
- 19. Add the orange peel and orange juice to the pot.
- 20. Pour in the vegetable broth.
- 21. Season with some salt.
- 22. Add peppercorns.
- 23. Drain the artichokes.
- 24. Add the artichokes to the pot.
- 25. Bring everything to a boil over medium heat.
- 26. Reduce the heat to low.
- 27. Simmer the artichokes covered for about 15 minutes.
- 28. Lift the artichokes out of the broth with a slotted spoon.
- 29. Serve the artichokes hot or cold.
