🍽️ Quick Bean and Meat Dish with Mushrooms

Ingredients
- 500 g Princess beans
- 400 g Pork tenderloin
- 125 g Button mushrooms
- 1 Onion
- 3 tbsp Basil (finely chopped)
- Salt
- Pepper (from the mill)
- 3 tbsp Ghee
- 200 g Whipping cream
- 1 tsp Grated lemon zest
- Lemon juice
- Basil (for garnish)
Instructions
- 1. Wash the beans thoroughly.
- 2. Remove the hard ends and any tough strings from the beans.
- 3. Clean the mushrooms to remove any dirt.
- 4. Slice the mushrooms into thin pieces.
- 5. Slice the meat across the grain into thin pieces.
- 6. Cut these meat slices further into thin strips.
- 7. Peel the onion.
- 8. Finely chop the onion.
- 9. Bring a pot of water to a boil and add plenty of salt.
- 10. Cook the beans in this water for 10 minutes.
- 11. Drain the beans.
- 12. Immediately shock the beans with ice-cold water to stop the cooking process.
- 13. Let the beans drain well.
- 14. Heat 1 tablespoon of melted butter in a pan.
- 15. Fry the mushroom slices briefly over high heat.
- 16. Season the mushrooms with salt and pepper.
- 17. Drizzle some lemon juice over the mushrooms.
- 18. Remove the mushrooms from the pan and set them aside.
- 19. Heat 1 tablespoon of melted butter in the same pan.
- 20. Sauté the chopped onion in it.
- 21. Pour the cream over the onion.
- 22. Season the cream with salt and pepper.
- 23. Let the sauce simmer gently for about 2 minutes.
- 24. Add the prepared basil strips to the sauce.
- 25. Add the drained beans to the sauce.
- 26. Let the beans sit briefly in the cream.
- 27. Heat the remaining butter fat in the pan.
- 28. Fry the meat strips for 4 minutes until browned.
- 29. Season the meat with salt and pepper.
- 30. Stir 2 tablespoons of water into the meat.
- 31. Add the lemon zest (without the white pith).
- 32. Add the lemon juice.
- 33. Serve the meat together with the bean cream mixture.
- 34. Sprinkle the fried mushroom slices over the dish.
- 35. Garnish the dish with fresh basil leaves.
