  2. 2. Remove the hard ends and any tough strings from the beans.
  3. 3. Clean the mushrooms to remove any dirt.
  4. 4. Slice the mushrooms into thin pieces.
  5. 5. Slice the meat across the grain into thin pieces.
  6. 6. Cut these meat slices further into thin strips.
  7. 7. Peel the onion.
  8. 8. Finely chop the onion.
  9. 9. Bring a pot of water to a boil and add plenty of salt.
  10. 10. Cook the beans in this water for 10 minutes.
  11. 11. Drain the beans.
  12. 12. Immediately shock the beans with ice-cold water to stop the cooking process.
  13. 13. Let the beans drain well.
  14. 14. Heat 1 tablespoon of melted butter in a pan.
  15. 15. Fry the mushroom slices briefly over high heat.
  16. 16. Season the mushrooms with salt and pepper.
  17. 17. Drizzle some lemon juice over the mushrooms.
  18. 18. Remove the mushrooms from the pan and set them aside.
  19. 19. Heat 1 tablespoon of melted butter in the same pan.
  20. 20. Sauté the chopped onion in it.
  21. 21. Pour the cream over the onion.
  22. 22. Season the cream with salt and pepper.
  23. 23. Let the sauce simmer gently for about 2 minutes.
  24. 24. Add the prepared basil strips to the sauce.
  25. 25. Add the drained beans to the sauce.
  26. 26. Let the beans sit briefly in the cream.
  27. 27. Heat the remaining butter fat in the pan.
  28. 28. Fry the meat strips for 4 minutes until browned.
  29. 29. Season the meat with salt and pepper.
  30. 30. Stir 2 tablespoons of water into the meat.
  31. 31. Add the lemon zest (without the white pith).
  32. 32. Add the lemon juice.
  33. 33. Serve the meat together with the bean cream mixture.
  34. 34. Sprinkle the fried mushroom slices over the dish.
  35. 35. Garnish the dish with fresh basil leaves.
