  1. 1. Fill a large pot with water and add plenty of salt. Bring the water to a boil.
  2. 2. Add flour, eggs, nutmeg, milk, and a little salt to a bowl. Quickly mix the ingredients into a firm dough.
  3. 3. Wet a cutting board and a knife with water. Hold the knife over the boiling salted water and scrape small pieces of dough directly into the water.
  4. 4. Let the spaetzle simmer in the water for a few minutes. They are done when they float to the surface.
  5. 5. Remove the spaetzle from the water using a slotted spoon. Let them drain briefly.
  6. 6. Toss the spaetzle in melted butter until they are nicely coated.
