🍰 Germknödel with Blueberries and Chia Seeds

Ingredients
- 500 g blueberries (frozen)
- 60 g honey (4 tbsp)
- 100 ml grape juice
- 1 stick cinnamon
- 5 g cornstarch (1 tsp)
- 1 cube fresh yeast
- 125 ml lukewarm milk (3.5 % fat)
- 150 g spelt wholemeal flour
- 110 g spelt flour Type 630
- 1 organic lemon (zest)
- salt
- 1 egg
- 65 g soft butter
- 18 g chia seeds (3 tbsp)
Instructions
- 1. Put the blueberries, 2 tablespoons of honey, the juice, and cinnamon into a pot.
- 2. Bring the mixture in the pot to a boil.
- 3. Gently mash the berries with a spoon or fork.
- 4. Simmer the berries over low heat for 5 minutes.
- 5. Stir the starch with a little cold water in a small bowl until smooth.
- 6. Add the mixed starch to the berries in the pot.
- 7. Cook the mixture while stirring constantly for 1 minute over low heat.
- 8. Let the fruit sauce cool down for 10 minutes.
- 9. Fill 4 ice cube trays halfway with the cooled fruit sauce.
- 10. Place the filled trays in the freezer for 2 hours.
- 11. Set aside the remaining fruit sauce for later use.
- 12. Mix the yeast with the remaining honey and milk in a bowl.
- 13. Lightly dust the yeast mixture with some spelt whole wheat flour.
- 14. Cover the bowl and let the yeast rise in a warm place for 20 minutes.
- 15. Add the remaining whole wheat flour, 100 g of spelt flour, the lemon zest, 1 pinch of salt, the egg, and 60 g of butter to the pre-dough.
- 16. Knead the ingredients into a smooth yeast dough.
- 17. Let the dough rise in a warm place for about 1 hour.
- 18. Dust the work surface with some flour.
- 19. Shape the dough into a long roll.
- 20. Cut the roll into 4 equal pieces.
- 21. Shape the dough pieces into round balls with your hands.
- 22. Gently flatten the dough balls.
- 23. Take the ice cube trays out of the freezer.
- 24. Take 1 frozen fruit cube from each form.
- 25. Place one fruit cube on each flat piece of dough.
- 26. Fold the dough edges over the fruit filling.
- 27. Press the dough edges firmly together to seal the filling.
- 28. Roll the dumplings into smooth balls with circular movements on the work surface.
- 29. Place the dumplings with the seam side down on a cloth.
- 30. Cover the dumplings and let them rise for 20 minutes.
- 31. Fill a pot with water and place a greased steamer insert inside.
- 32. Bring the water in the pot to a boil.
- 33. Place the yeast dumplings into the steamer insert.
- 34. Steam the dumplings for 20 minutes.
- 35. Spread the reserved fruit sauce on a plate.
- 36. Place a finished yeast dumpling on the sauce.
- 37. Sprinkle the dumpling with chia seeds.
