  1. 1. Take the cured meat out of the brine.
  2. 2. Rinse the meat several times under fresh running water.
  3. 3. Fill a pot with plenty of water and bring it to a boil.
  4. 4. Place the rinsed meat into the boiling water.
  5. 5. Reduce the heat to low and let the meat simmer gently for about 1 hour.
  6. 6. After 30 minutes of cooking, add halved onions and roughly chopped soup vegetables (e.g., carrots, celery, and leeks) to the pot.
  7. 7. Do not add any extra salt, as the meat is already cured.
  8. 8. Serve the meat with sauerkraut, red cabbage, or Teltow turnips.
