🍽️ Fresh vegetable salad with marinated prawns

Ingredients
- 400 g ready-to-cook large shrimp
- 2 limes (juice)
- 1 garlic clove
- 10 g fresh ginger
- 6 tbsp olive oil
- 3 ripe avocados
- 2 yellow bell peppers
- 250 g white beans (can)
- 250 g cherry tomatoes
- 2 red onions
- salt
- pepper (from the mill)
- 3 tbsp fresh basil
Instructions
- 1. Squeeze the juice of one lime into a bowl.
- 2. Peel one clove of garlic and press it directly into the lime juice.
- 3. Grate fresh ginger finely using a small kitchen grater and add it.
- 4. Add two tablespoons of olive oil and stir the marinade well.
- 5. Place the prawns into the marinade.
- 6. Cover the bowl and place it in the refrigerator for about one hour.
- 7. Wash the avocados and cut them in half.
- 8. Remove the pits and carefully scoop out the flesh.
- 9. Cut the avocado flesh into small cubes.
- 10. Wash the bell peppers thoroughly.
- 11. Cut the peppers in half lengthwise.
- 12. Remove the core and the white inner membranes.
- 13. Dice the pepper flesh into fine cubes.
- 14. Drain the white beans well in a sieve.
- 15. Wash the cherry tomatoes.
- 16. Cut the tomatoes in half.
- 17. Peel the onions.
- 18. Cut the onions in half.
- 19. Cut the onion halves into thin rings.
- 20. Take the prawns out of the marinade.
- 21. Heat two tablespoons of olive oil in a non-stick pan.
- 22. Fry the prawns in batches for about two minutes on all sides.
- 23. Add all the fried prawns back into the pan.
- 24. Pour the remaining marinade over the prawns.
- 25. Let the prawns simmer in the sauce for one more minute.
- 26. Wash the basil.
- 27. Cut the basil leaves into thin strips.
- 28. Mix the warm prawns with the prepared vegetables.
- 29. Season the salad with salt and pepper to taste.
- 30. Add two tablespoons of olive oil.
- 31. Refine the flavor with a little lime juice.
- 32. Divide the salad into four small bowls.
- 33. Garnish each plate with the basil strips.
- 34. Serve the salad immediately.
