🍽️ Homestyle Vegetable Soup

Ingredients
- 0.5 Savoy cabbage head
- 1 stalk leek
- 3 carrots
- 3 garlic cloves
- 5 potatoes
- 2 onions
- 50 g ginger
- herb salt
- 4 sprigs parsley
- salt
- pepper
- 3 tbsp olive oil
Instructions
- 1. Wash the savoy cabbage thoroughly.
- 2. Separate the leaves from the hard core.
- 3. Halve the leaves and cut them into bite-sized pieces.
- 4. Clean the leek and wash it.
- 5. Cut the leek into four parts.
- 6. Peel the carrots.
- 7. Cut the carrots into thick slices.
- 8. Peel the garlic clove.
- 9. Peel the potatoes.
- 10. Quarter the potatoes lengthwise.
- 11. Peel the onions.
- 12. Cut the onions into wedges.
- 13. Peel the ginger.
- 14. Slice the ginger into thin pieces.
- 15. Place all the prepared vegetables together with the garlic and ginger in a large pot.
- 16. Pour in enough water to completely cover the vegetables.
- 17. Add 1 tablespoon of herb salt.
- 18. Bring the mixture to a boil.
- 19. Cover and simmer the soup over medium heat for 15–20 minutes.
- 20. Check if the potatoes are soft.
- 21. Wash the parsley.
- 22. Shake off excess water from the parsley.
- 23. Chop the parsley finely.
- 24. Remove the pot from the heat.
- 25. Season the soup with olive oil.
- 26. Stir in the chopped parsley.
- 27. Season the soup with salt and pepper to taste.
