  1. 1. Wash the savoy cabbage thoroughly.
  2. 2. Separate the leaves from the hard core.
  3. 3. Halve the leaves and cut them into bite-sized pieces.
  4. 4. Clean the leek and wash it.
  5. 5. Cut the leek into four parts.
  6. 6. Peel the carrots.
  7. 7. Cut the carrots into thick slices.
  8. 8. Peel the garlic clove.
  9. 9. Peel the potatoes.
  10. 10. Quarter the potatoes lengthwise.
  11. 11. Peel the onions.
  12. 12. Cut the onions into wedges.
  13. 13. Peel the ginger.
  14. 14. Slice the ginger into thin pieces.
  15. 15. Place all the prepared vegetables together with the garlic and ginger in a large pot.
  16. 16. Pour in enough water to completely cover the vegetables.
  17. 17. Add 1 tablespoon of herb salt.
  18. 18. Bring the mixture to a boil.
  19. 19. Cover and simmer the soup over medium heat for 15–20 minutes.
  20. 20. Check if the potatoes are soft.
  21. 21. Wash the parsley.
  22. 22. Shake off excess water from the parsley.
  23. 23. Chop the parsley finely.
  24. 24. Remove the pot from the heat.
  25. 25. Season the soup with olive oil.
  26. 26. Stir in the chopped parsley.
  27. 27. Season the soup with salt and pepper to taste.
