  1. 1. Peel the carrot and cut it into small cubes.
  2. 2. Wash the spring onions, trim the ends, and slice them into rings.
  3. 3. Peel the ginger and cut it into thin slices.
  4. 4. Heat the sesame oil in a pot.
  5. 5. Sauté the carrots, spring onions, ginger, and broccoli briefly in the hot oil.
  6. 6. Deglaze the vegetables with the vegetable broth.
  7. 7. Wash the lemongrass stalk, roughly chop it, and add it to the soup.
  8. 8. Let the soup simmer for about 10 minutes.
  9. 9. Add the Mie noodles (according to package instructions) and the shrimp 4 minutes before the end of the cooking time.
  10. 10. Season the soup with soy sauce and lime juice.
  11. 11. Adjust the taste to your liking with Tabasco and fresh coriander.
