🍝 Aromatic Noodle and Shrimp Soup

Ingredients
- 1 carrot
- 0.5 bunch spring onions
- 1 walnut-sized piece ginger
- 1 tbsp sesame oil
- 150 g broccoli florets
- 750 ml vegetable broth
- 1 stalk lemongrass
- 100 g mie noodles (Chinese egg noodles)
- 150 g shrimp
- soy sauce
- 2 tbsp lime juice
- Tabasco (to taste)
- coriander (to taste)
Instructions
- 1. Peel the carrot and cut it into small cubes.
- 2. Wash the spring onions, trim the ends, and slice them into rings.
- 3. Peel the ginger and cut it into thin slices.
- 4. Heat the sesame oil in a pot.
- 5. Sauté the carrots, spring onions, ginger, and broccoli briefly in the hot oil.
- 6. Deglaze the vegetables with the vegetable broth.
- 7. Wash the lemongrass stalk, roughly chop it, and add it to the soup.
- 8. Let the soup simmer for about 10 minutes.
- 9. Add the Mie noodles (according to package instructions) and the shrimp 4 minutes before the end of the cooking time.
- 10. Season the soup with soy sauce and lime juice.
- 11. Adjust the taste to your liking with Tabasco and fresh coriander.
