  2. 2. Remove the marrow from the bones and set it aside.
  3. 3. Place the meat and bones in a pot with 2 liters of cold water.
  4. 4. Season the broth with salt and peppercorns.
  5. 5. Bring the mixture to a boil, then let it simmer for 90 minutes.
  6. 6. Strain the broth through a sieve.
  7. 7. Bring 250 milliliters of water to a boil in a pot.
  8. 8. Cut the prepared bone marrow into small cubes.
  9. 9. Add the marrow cubes and butter to the boiling water.
  10. 10. Stir in the flour and keep stirring until a white mass forms at the bottom of the pot.
  11. 11. Remove the pot from the heat.
  12. 12. Work the eggs into the mixture one by one.
  13. 13. Season the dough to taste.
  14. 14. If necessary, add a little more whole wheat flour or butter to achieve the right consistency.
  15. 15. Clean, peel, and cut the celeriac, carrots, and kohlrabi into cubes or strips.
  16. 16. Clean the leek, wash it, and slice it into rings.
  17. 17. Clean the beans, wash them, and halve them.
  18. 18. Clean the cauliflower, wash it, and divide it into small florets.
  19. 19. Add all the prepared vegetables to the hot broth.
  20. 20. Let the vegetables cook for about 15 minutes until tender-crisp.
  21. 21. Take two teaspoons and form small dumplings from the bone marrow dough.
  22. 22. Let the dumplings simmer in salted, gently bubbling water for about 10 minutes.
  23. 23. Remove the cooked dumplings.
  24. 24. Add the dumplings to the vegetable soup.
  25. 25. Finally, adjust the seasoning of the soup.
  26. 26. Wash the parsley and shake it dry.
  27. 27. Finely chop the parsley.
  28. 28. Sprinkle the chopped parsley over the vegetable soup.
  29. 29. Serve the boiled soup meat together with the vegetable soup.
