🍽️ Hearty Vegetable Soup with Bone Marrow Dumplings

Ingredients
- 800 g soup meat
- 2 bone marrow bones
- salt
- 5 peppercorns
- 30 g butter
- 120 g whole wheat flour
- 3 eggs
- 300 g celeriac
- 3 carrots
- 1 kohlrabi
- 1 stalk leek
- 125 g green beans
- 800 g cauliflower
- 2 sprigs parsley
Instructions
- 1. Thoroughly wash the meat and the marrow bones.
- 2. Remove the marrow from the bones and set it aside.
- 3. Place the meat and bones in a pot with 2 liters of cold water.
- 4. Season the broth with salt and peppercorns.
- 5. Bring the mixture to a boil, then let it simmer for 90 minutes.
- 6. Strain the broth through a sieve.
- 7. Bring 250 milliliters of water to a boil in a pot.
- 8. Cut the prepared bone marrow into small cubes.
- 9. Add the marrow cubes and butter to the boiling water.
- 10. Stir in the flour and keep stirring until a white mass forms at the bottom of the pot.
- 11. Remove the pot from the heat.
- 12. Work the eggs into the mixture one by one.
- 13. Season the dough to taste.
- 14. If necessary, add a little more whole wheat flour or butter to achieve the right consistency.
- 15. Clean, peel, and cut the celeriac, carrots, and kohlrabi into cubes or strips.
- 16. Clean the leek, wash it, and slice it into rings.
- 17. Clean the beans, wash them, and halve them.
- 18. Clean the cauliflower, wash it, and divide it into small florets.
- 19. Add all the prepared vegetables to the hot broth.
- 20. Let the vegetables cook for about 15 minutes until tender-crisp.
- 21. Take two teaspoons and form small dumplings from the bone marrow dough.
- 22. Let the dumplings simmer in salted, gently bubbling water for about 10 minutes.
- 23. Remove the cooked dumplings.
- 24. Add the dumplings to the vegetable soup.
- 25. Finally, adjust the seasoning of the soup.
- 26. Wash the parsley and shake it dry.
- 27. Finely chop the parsley.
- 28. Sprinkle the chopped parsley over the vegetable soup.
- 29. Serve the boiled soup meat together with the vegetable soup.
