🍽️ Fresh vegetable soup with green beans

Ingredients
- 125 g green beans
- 1 onion
- 1 carrot
- 150 g potatoes
- 150 g kohlrabi
- 1 clove garlic
- 1 tbsp rapeseed oil
- 2 tbsp vinegar
- 2 tbsp tomato paste
- 400 g peeled tomatoes (can)
- 450 ml vegetable broth
- salt
- pepper
- 0.5 tsp honey
- 0.5 tsp cumin (ground)
Instructions
- 1. Wash the green beans thoroughly.
- 2. Cut the beans diagonally into small pieces.
- 3. Bring water to a boil and add some salt.
- 4. Boil the beans in the salted water for about 3 minutes.
- 5. Drain the beans and let them drip dry.
- 6. Peel the onion.
- 7. Halve the onion lengthwise.
- 8. Cut the onion halves into thin strips.
- 9. Peel the carrot.
- 10. Cut the carrot into small pieces.
- 11. Peel the potatoes.
- 12. Cut the potatoes into cubes.
- 13. Peel the kohlrabi.
- 14. Cut the kohlrabi into short batons.
- 15. Heat oil in a pot.
- 16. Sauté the onions until translucent.
- 17. Add the chopped vegetables and garlic.
- 18. Sauté the mixture briefly.
- 19. Stir in the vinegar and tomato paste.
- 20. Add the tomatoes including their juice.
- 21. Mash the tomatoes slightly with a spoon.
- 22. Pour in the broth.
- 23. Season the soup with salt, pepper, honey, and cumin.
- 24. Bring the soup to a boil.
- 25. Let the soup simmer for about 8 minutes.
- 26. Serve the soup in bowls.
