🍽️ Kid-Friendly Vegetable Soup with Cheese

Ingredients
- 150 g kohlrabi
- 1 bunch spring onions
- 3 sprigs thyme
- 600 ml vegetable broth
- 1 zucchini
- 2 carrots
- 80 g frozen peas
- 50 g noodles
- salt
- 80 g cooked ham
- 4 slices baguette
- 3 tsp ricotta
- 2 tbsp grated parmesan
Instructions
- 1. Peel the kohlrabi and cut it into small cubes.
- 2. Wash the spring onions and slice them into thin rings.
- 3. Wash the thyme sprigs and pat them dry.
- 4. Add the kohlrabi, spring onions, and thyme to a pot with the broth.
- 5. Let the mixture simmer gently for 10 minutes.
- 6. Wash the zucchini and cut it into cubes or thin slices.
- 7. Peel the carrots and dice them finely.
- 8. Add the zucchini and carrots, along with the peas and pasta, to the broth.
- 9. Cook everything for another 8 minutes.
- 10. Remove the thyme sprigs from the soup.
- 11. Season the soup with salt to taste.
- 12. Cut the ham into small cubes.
- 13. Warm the ham cubes in the hot vegetable soup.
- 14. Divide the soup among small bowls.
- 15. Place toasted baguette slices on top of the soup.
- 16. Add a dollop of ricotta and grated parmesan to each bowl.
