  2. 2. Wash the thyme under running water.
  3. 3. Shake off excess water from the thyme.
  4. 4. Pluck the small thyme leaves off the stems.
  5. 5. Clean the mushrooms with a kitchen towel.
  6. 6. Wash the bell peppers under running water.
  7. 7. Cut the bell peppers in half.
  8. 8. Remove the seeds and white inner walls of the peppers.
  9. 9. Cut the peppers into pieces about 2 to 3 centimeters in size.
  10. 10. Peel the onions completely.
  11. 11. Cut the onions into wedges.
  12. 12. Wash the zucchini under running water.
  13. 13. Slice the zucchini lengthwise into thin slices.
  14. 14. Make sure the zucchini slices are about 0.4 centimeters thick.
  15. 15. Peel the garlic cloves.
  16. 16. Mince the garlic very finely.
  17. 17. Mix the minced garlic with the thyme leaves.
  18. 18. Add the oil to the garlic-thyme mixture.
  19. 19. Season the mixture with salt.
  20. 20. Season the mixture with black pepper.
  21. 21. Roll up the zucchini slices into small rolls.
  22. 22. Thread the zucchini rolls onto the wooden skewers.
  23. 23. Add the mushrooms to the skewers.
  24. 24. Add the bell pepper pieces to the skewers.
  25. 25. Add the onion wedges to the skewers.

  27. 27. Slice the Cypriot cheese.
  28. 28. Make sure the cheese slices are about 1 centimeter thick.
  29. 29. Brush the vegetable skewers with the herb-oil mixture.
  30. 30. Brush the cheese slices with the herb-oil mixture as well.
  31. 31. Place the skewers on the preheated grill.
  32. 32. Grill the skewers for 5 to 8 minutes.
  33. 33. Turn the skewers occasionally while grilling.
  34. 34. Serve the skewers with grilled pita bread as desired.
  35. 35. Serve grilled lemon wedges as a side.
