🍽️ Grilled Vegetable Skewers with Flatbread

Ingredients
- 3 bell peppers (red, yellow and green)
- 1 zucchini
- 1 eggplant
- 0.5 cucumber
- 150 g cherry tomatoes
- 100 g pickled corn cobs
- 6 small shallots
- 150 g small button mushrooms
- 5 tbsp olive oil
- 1 tbsp sweet paprika powder
- salt
- pepper
- 4 homemade, vegan pita breads
Instructions
- 1. Wash the bell peppers thoroughly.
- 2. Remove the seeds and cut the peppers into bite-sized cubes.
- 3. Wash the zucchini and the eggplant.
- 4. Cut the zucchini and the eggplant lengthwise into three strips.
- 5. Slice the strips into thick rounds.
- 6. Wash the cucumber half.
- 7. Cut the cucumber in half.
- 8. Slice the cucumber halves into rounds.
- 9. Wash the tomatoes.
- 10. Drain the corn from the can or bag well.
- 11. Cut the corn cobs in half.
- 12. Peel the shallots.
- 13. Clean the mushrooms of dirt.
- 14. Thread all the prepared vegetable pieces alternately onto the wooden skewers.
- 15. Mix the oil with paprika powder, salt, and pepper in a small bowl.
- 16. Brush the skewers generously with the marinade.
- 17. Preheat the grill.
- 18. Place the skewers on the hot grill.
- 19. Grill the skewers for 5 to 10 minutes.
- 20. Turn the skewers regularly while grilling.
- 21. Place the pitas on the hot grill.
- 22. Toast the pitas briefly.
- 23. Serve the grilled skewers together with the warm pita bread.
