  1. 1. Clean the mushrooms thoroughly.
  2. 2. Twist the stems out of the mushrooms carefully.
  3. 3. Trim off the tough ends of the mushroom stems.
  4. 4. Wash the peppers well.
  5. 5. Cut the peppers in half lengthwise.
  6. 6. Remove the seeds and white pith from the peppers.
  7. 7. Cut the pepper halves into bite-sized pieces.
  8. 8. Wash the spring onions and remove the dry outer skins.
  9. 9. Cut the white part and the light green leaves of the spring onions into diagonal pieces.
  10. 10. Make sure the spring onion pieces are about 3 centimeters long.
  11. 11. Whisk the olive oil, lemon juice, and honey together in a small bowl.
  12. 12. Season the oil mixture generously with salt and pepper.
  13. 13. Thread two mushroom halves onto a skewer.
  14. 14. Place a piece of feta cheese between the mushroom halves.
  15. 15. Thread the spring onion pieces onto the skewer.
  16. 16. Add the previously trimmed mushroom stems to the skewer.
  17. 17. Add the pepper pieces as the final component to the skewer.
  18. 18. Brush the filled skewers evenly with the seasoned oil mixture.
  19. 19. Grill the skewers for about 10 to 15 minutes.
  20. 20. Turn the skewers regularly while grilling so they cook evenly.
  21. 21. Peel the garlic clove.
  22. 22. Mince the garlic very finely.
  23. 23. Mix the minced garlic with the yoghurt.
  24. 24. Add a splash of olive oil to the yoghurt mixture.
  25. 25. Finely chop the parsley and add it.
  26. 26. Stir two tablespoons of water into the yoghurt mixture.
  27. 27. Whisk everything together into a creamy sauce.
  28. 28. Season the yoghurt dip finally with salt and pepper.
  29. 29. Serve the grilled skewers together with the garlic yoghurt.
