🍽️ Oven Vegetable Skewers with Pumpkin and Bell Pepper

Ingredients
- 1 Butternut squash
- 2 green bell peppers
- Olive oil (cold pressed)
- Salt
- Pepper (freshly ground)
- Rosemary
- 8 wooden skewers
Instructions
- 1. Preheat the oven to 200 degrees Celsius.
- 2. Peel the pumpkin and remove the seeds.
- 3. Cut the pumpkin flesh into bite-sized cubes.
- 4. Thoroughly wash the bell peppers.
- 5. Halve the bell peppers and remove the inside including the seeds.
- 6. Cut the peppers into rectangular pieces.
- 7. Thread the pumpkin cubes and pepper pieces alternately onto 8 wooden skewers.
- 8. Brush the skewers with some oil.
- 9. Season the skewers with salt, pepper, and rosemary.
- 10. Brush a baking tray with oil.
- 11. Place the skewers on the prepared baking tray.
- 12. Roast the skewers in the preheated oven for 20 to 30 minutes until golden brown.
- 13. Ensure that the pumpkin becomes completely soft during cooking.
- 14. Alternatively, you can place the skewers under the oven grill.
- 15. Keep a close eye on them to prevent the skewers from burning.
