  1. 1. Wash the beets under running water, scrub them clean, and boil them with cumin in enough water for 45 minutes until tender.
  2. 2. Boil the cauliflower florets in salted water for 8 minutes. Then drain the vegetables and let them cool.
  3. 3. Peel the cooked beets and cut them into small cubes along with the meat and cheese. Peel the shallot and ginger and dice them very finely as well.
  4. 4. Crush the mustard seeds in a mortar and mix them with vinegar, salt, both oils, the shallot, ginger, and pepper.
  5. 5. Mix all salad ingredients in a bowl, add the dressing, and season to taste. Let the salad marinate for 30 minutes before serving and sprinkle with chervil.
