Ingredients
- 1 radish
- 1 zucchini
- 1 bulb fennel
- 2 tomatoes
- 1 bunch radishes
- 1 lime
- 1 bunch basil
- 4 tbsp olive oil
- 2 tbsp grated parmesan
Instructions
- 1. Wash the daikon radish and the zucchini, trim the ends, and slice the vegetables thinly. Clean and wash the fennel, then grate it finely.
- 2. Blanch the tomatoes with hot water, shock them under cold water, quarter them, and remove the seeds. Wash the radishes and chop them finely. Squeeze the lime and mix the juice with the oil, the finely chopped basil, and the radish cubes to make a vinaigrette.
- 3. Arrange the vegetable slices in a fan shape on the plates, place the tomato in the center, drizzle with the vinaigrette, and sprinkle with Parmesan cheese.
