🍽️ Vegetable Pizza with Sour Cream Topping

Ingredients
- 15 g fresh yeast
- 1 pinch sugar
- 300 g spelt flour type 1050 (+ 1 tbsp for working)
- 1 tsp salt
- 2 tbsp olive oil
- 300 g cherry tomatoes
- 2 yellow bell peppers
- 200 g mozzarella
- 100 g sour cream
- 100 g grated Emmental
- 3 sprigs basil
Instructions
- 1. Crumble the yeast into a small bowl.
- 2. Add 3 tablespoons of lukewarm water and the sugar.
- 3. Stir the mixture until smooth and the yeast and sugar have dissolved.
- 4. Mix the flour in a large bowl with the salt.
- 5. Make a well in the center of the flour mixture.
- 6. Pour the yeast mixture into the well.
- 7. Lightly dust the surface with a little flour.
- 8. Cover the bowl and let the dough rise in a warm place for 15 minutes.
- 9. Pour about 100 milliliters of lukewarm water onto the dough.
- 10. Knead the dough until it is smooth and elastic.
- 11. Shape the dough into a ball.
- 12. Cover the bowl again and let the dough rise in a warm place for about 1 hour.
- 13. Knead the dough vigorously after the resting period.
- 14. Work the olive oil into the dough while kneading.
- 15. Divide the dough into 4 equal parts.
- 16. Lightly dust the work surface with flour.
- 17. Roll out the dough pieces into 4 round pizzas.
- 18. Place the pizzas with some distance apart on 2 sheets of baking paper.
- 19. Let the pizzas rise again for 15 minutes.
- 20. Wash the tomatoes under running water.
- 21. Dry the tomatoes thoroughly.
- 22. Halve the tomatoes.
- 23. Wash the bell peppers under running water.
- 24. Halve the bell peppers.
- 25. Remove the seeds and white pith (core the peppers).
- 26. Quarter the bell peppers.
- 27. Cut the peppers into thin strips.
- 28. Slice the mozzarella.
- 29. Distribute the mozzarella on the pizzas.
- 30. Distribute the sour cream on the pizzas.
- 31. Leave a small border around the edge of the pizza.
- 32. Top the pizzas with the tomatoes.
- 33. Top the pizzas with the pepper strips.
- 34. Sprinkle grated Emmental cheese over the pizzas.
- 35. Preheat the oven to 240 °C (fan forced 230 °C or gas: highest setting).
- 36. Place a sheet of baking paper on a baking tray.
- 37. Place the pizzas on the prepared tray.
- 38. Bake the pizzas in the preheated oven for approx. 10 minutes.
- 39. Bake the remaining pizzas in the same way.
- 40. Wash the basil under running water.
- 41. Shake the basil dry.
- 42. Cut the basil leaves into thin strips.
- 43. Garnish the finished pizzas with the basil strips.
- 44. Serve the vegetable pizza with sour cream immediately.
