🍽️ Quick Pan with Turkey and Seasonal Vegetables

Ingredients
- 2 red onions
- 400 g Brussels sprouts
- 400 g globe artichokes
- 2 tbsp sunflower oil
- salt
- pepper (from the mill)
- 1 tsp cumin
- 300 g turkey breast fillet (boneless)
- 2 pears
- 1 tbsp walnut oil
Instructions
- 1. Peel the onions and cut them in half. Slice the halves into half-rings.
- 2. Wash the Brussels sprouts thoroughly. Trim off the tough ends and slice the rest into thin pieces.
- 3. Peel the salsify and slice it into thin pieces as well.
- 4. Heat half a tablespoon of oil in the pan.
- 5. Sauté the onions and the salsify for a few minutes.
- 6. Add the Brussels sprouts and stir them in.
- 7. Season everything with salt, pepper, and cumin.
- 8. Add half a cup of liquid to the pan.
- 9. Place a lid on the pan.
- 10. Let the vegetables simmer gently for 5 minutes.
- 11. Cut the turkey breast into thin strips.
- 12. Season the turkey strips with salt and pepper.
- 13. Heat the remaining oil in a separate pan or the same pot.
- 14. Quickly sear the turkey strips.
- 15. Remove the turkey strips from the pan.
- 16. Keep the turkey strips warm.
- 17. Peel the pears.
- 18. Cut the pears into quarters.
- 19. Remove the core from the pear pieces.
- 20. Dice the flesh into small cubes.
- 21. Add the pear cubes to the salsify in the pan.
- 22. Stir everything well.
- 23. Add the walnut oil.
- 24. Let the vegetables simmer for another 3 minutes.
- 25. Finally, adjust the seasoning of the sauce to taste.
- 26. Serve the dish topped with the warm turkey strips.
