  2. 2. Wash the Brussels sprouts thoroughly. Trim off the tough ends and slice the rest into thin pieces.
  3. 3. Peel the salsify and slice it into thin pieces as well.
  4. 4. Heat half a tablespoon of oil in the pan.
  5. 5. Sauté the onions and the salsify for a few minutes.
  6. 6. Add the Brussels sprouts and stir them in.
  7. 7. Season everything with salt, pepper, and cumin.
  8. 8. Add half a cup of liquid to the pan.
  9. 9. Place a lid on the pan.
  10. 10. Let the vegetables simmer gently for 5 minutes.
  11. 11. Cut the turkey breast into thin strips.
  12. 12. Season the turkey strips with salt and pepper.
  13. 13. Heat the remaining oil in a separate pan or the same pot.
  14. 14. Quickly sear the turkey strips.
  15. 15. Remove the turkey strips from the pan.
  16. 16. Keep the turkey strips warm.
  17. 17. Peel the pears.
  18. 18. Cut the pears into quarters.
  19. 19. Remove the core from the pear pieces.
  20. 20. Dice the flesh into small cubes.
  21. 21. Add the pear cubes to the salsify in the pan.
  22. 22. Stir everything well.
  23. 23. Add the walnut oil.
  24. 24. Let the vegetables simmer for another 3 minutes.
  25. 25. Finally, adjust the seasoning of the sauce to taste.
  26. 26. Serve the dish topped with the warm turkey strips.
