  1. 1. Wash the Brussels sprouts thoroughly.
  2. 2. Remove the tough bottom ends.
  3. 3. Halve the heads lengthwise.
  4. 4. Blanch the Brussels sprout halves in boiling salted water for about 8 minutes.
  5. 5. Let the vegetables drain well.
  6. 6. Remove the meat from the ribs.
  7. 7. Cut the meat into small cubes.
  8. 8. Peel the onion.
  9. 9. Finely chop the onion.
  10. 10. Wash the bell pepper.
  11. 11. Halve the bell pepper.
  12. 12. Remove the core and seeds.
  13. 13. Cut the bell pepper into small pieces.
  14. 14. Heat 1 tablespoon of butter in a deep pan.
  15. 15. Sauté the onions until translucent.
  16. 16. Add the bell pepper and the smoked pork.
  17. 17. Sauté everything for another 5 minutes.
  18. 18. Add the drained Brussels sprouts.
  19. 19. Sauté the vegetables while stirring for 1 to 2 more minutes.
  20. 20. Season the pan with salt and pepper.
  21. 21. Finely chop the garlic clove.
  22. 22. Plate the vegetables.
  23. 23. Sprinkle fresh cress over the dish.
  24. 24. Serve with fresh garlic if desired.
