🍽️ Vegetable Frittata with Minced Meat

Ingredients
- 500 g cooked potatoes (from the day before)
- 2 onions
- 2 red bell peppers
- 3 tbsp mixed olives (pitted, chopped)
- 1 small red chili pepper
- 5 tbsp olive oil
- 400 g mixed minced meat
- salt
- pepper
- paprika powder (medium hot)
- 6 eggs
- 50 g whipping cream
Instructions
- 1. Peel the potatoes and cut them into cubes of about 1 cm.
- 2. Peel the onions and chop them finely.
- 3. Wash the peppers, halve them, remove the seeds and the white inner membrane, and cut the flesh into thin strips.
- 4. Wash the chili pepper, cut it lengthwise, remove the seeds and the white inner membrane, and chop it finely.
- 5. Heat some oil in an oven-safe pan.
- 6. Briefly fry the potato cubes and then remove them from the pan.
- 7. Add the onions to the pan and sauté until translucent.
- 8. Remove the onions from the pan.
- 9. Fry the pepper strips in the pan for 2 minutes.
- 10. Add the minced meat and fry until crumbly.
- 11. Fold in the potatoes, onions, olives, and chili into the meat mixture.
- 12. Season everything with salt, pepper, and paprika powder.
- 13. Whisk the eggs with the cream.
- 14. Season the egg mixture with salt and pepper.
- 15. Pour the egg mixture over the meat and potato mass.
- 16. Let the frittata set (become firm) over low to medium heat.
- 17. Place the pan with the frittata in the preheated oven (200°C).
- 18. Bake the frittata for approx. 5 minutes until the surface is firm.
- 19. Plate the frittata.
- 20. Sprinkle with chopped herbs if desired.
- 21. Serve the frittata.
