🍽️ Cheesy Vegetable Casserole

Ingredients
- 3 medium zucchini
- 200 g green beans
- 200 g spinach
- 1 tbsp chopped parsley
- 1 tbsp chopped dill
- 1 tbsp chopped mint
- 3 slices white sandwich bread
- 125 g feta
- 100 g Gruyère cheese (grated)
- 6 eggs
- salt
- pepper (from the mill)
- 1 tbsp olive oil
- 1 tbsp sesame seeds
Instructions
- 1. Wash the zucchini thoroughly and remove the tough ends.
- 2. Bring a pot of salted water to a boil.
- 3. Add the prepared zucchini and the beans to the boiling water.
- 4. Cook the vegetables for 5 minutes.
- 5. Drain the vegetables and rinse them immediately with ice-cold water to stop the cooking process.
- 6. Let the vegetables cool down completely.
- 7. Wash the spinach thoroughly and remove woody stems or wilted leaves.
- 8. Bring a new pot of salted water to a boil.
- 9. Add the wet spinach to the boiling water.
- 10. Cook the spinach briefly until it has wilted.
- 11. Drain the spinach and rinse it with cold water.
- 12. Squeeze the spinach firmly to remove excess moisture.
- 13. Cut the cooled zucchini and beans into small pieces.
- 14. Also chop the squeezed spinach into small pieces.
- 15. Place the chopped vegetables into a large bowl.
- 16. Finely chop the fresh herbs and add them to the vegetables.
- 17. Mix the vegetables and herbs well together.
- 18. Toast the bread in a toaster or in a pan.
- 19. Cut the toasted bread into small cubes.
- 20. Place the bread cubes into a separate bowl.
- 21. Crumble the feta cheese into small pieces using your fingers.
- 22. Add the crumbled feta and the grated cheese to the bread cubes.
- 23. Whisk the eggs in a small bowl with salt and pepper.
- 24. Pour the seasoned eggs over the bread and cheese mixture.
- 25. Mix everything well so that the bread absorbs the liquid.
- 26. Add the prepared vegetable mixture to the bread and cheese mixture.
- 27. Stir everything gently but thoroughly.
- 28. Preheat the oven to 200 degrees Celsius.
- 29. Grease a large baking dish (or four small dishes) with olive oil.
- 30. Place the entire vegetable mixture into the prepared dish.
- 31. Smooth the surface of the mixture.
- 32. Bake the casserole in the preheated oven for approx. 35 minutes until golden yellow.
