  1. 1. Wash the zucchini thoroughly and remove the tough ends.
  2. 2. Bring a pot of salted water to a boil.
  3. 3. Add the prepared zucchini and the beans to the boiling water.
  4. 4. Cook the vegetables for 5 minutes.
  5. 5. Drain the vegetables and rinse them immediately with ice-cold water to stop the cooking process.
  6. 6. Let the vegetables cool down completely.
  7. 7. Wash the spinach thoroughly and remove woody stems or wilted leaves.
  8. 8. Bring a new pot of salted water to a boil.
  9. 9. Add the wet spinach to the boiling water.
  10. 10. Cook the spinach briefly until it has wilted.
  11. 11. Drain the spinach and rinse it with cold water.
  12. 12. Squeeze the spinach firmly to remove excess moisture.
  13. 13. Cut the cooled zucchini and beans into small pieces.
  14. 14. Also chop the squeezed spinach into small pieces.
  15. 15. Place the chopped vegetables into a large bowl.
  16. 16. Finely chop the fresh herbs and add them to the vegetables.
  17. 17. Mix the vegetables and herbs well together.
  18. 18. Toast the bread in a toaster or in a pan.
  19. 19. Cut the toasted bread into small cubes.
  20. 20. Place the bread cubes into a separate bowl.
  21. 21. Crumble the feta cheese into small pieces using your fingers.
  22. 22. Add the crumbled feta and the grated cheese to the bread cubes.
  23. 23. Whisk the eggs in a small bowl with salt and pepper.
  24. 24. Pour the seasoned eggs over the bread and cheese mixture.
  25. 25. Mix everything well so that the bread absorbs the liquid.
  26. 26. Add the prepared vegetable mixture to the bread and cheese mixture.
  27. 27. Stir everything gently but thoroughly.
  28. 28. Preheat the oven to 200 degrees Celsius.
  29. 29. Grease a large baking dish (or four small dishes) with olive oil.
  30. 30. Place the entire vegetable mixture into the prepared dish.
  31. 31. Smooth the surface of the mixture.
  32. 32. Bake the casserole in the preheated oven for approx. 35 minutes until golden yellow.
