  1. 1. Wash the bell pepper thoroughly.
  2. 2. Remove the inside of the bell pepper.
  3. 3. Cut the bell pepper into strips.
  4. 4. Wash the broccoli florets.
  5. 5. Divide the broccoli florets into smaller pieces.
  6. 6. Peel the broccoli stems.
  7. 7. Chop the broccoli stems finely.
  8. 8. Wash the asparagus.
  9. 9. Trim the hard ends from the asparagus.
  10. 10. Cut the asparagus into pieces.
  11. 11. Wash the spring onions.
  12. 12. Remove the tips of the spring onions.
  13. 13. Finely chop the white and light green parts of the spring onions.
  14. 14. Heat 1 tbsp of sesame oil in a wok or a large pan.
  15. 15. Fry the shrimp all around for about 3 minutes.
  16. 16. Remove the shrimp from the pan.
  17. 17. Season the shrimp with salt and pepper.
  18. 18. Keep the shrimp warm.
  19. 19. Heat a little more sesame oil in the pan.
  20. 20. Add the broccoli stems and the bell pepper to the pan.
  21. 21. Fry the vegetables while stirring.
  22. 22. Add the asparagus and the broccoli florets.
  23. 23. Continue to fry the vegetables while stirring.
  24. 24. Add the spring onions.
  25. 25. Continue to fry the vegetables while stirring.
  26. 26. Add more sesame oil as needed.
  27. 27. Season the vegetables with oyster sauce.
  28. 28. Add a little soy sauce.
  29. 29. Add the shrimp back to the pan.
  30. 30. Heat everything through.
  31. 31. Garnish the dish with coriander leaves.
  32. 32. Serve the dish.
