  1. 1. Clean the mushrooms and cut them into bite-sized pieces.
  2. 2. Wash the snow peas and remove the tough ends.
  3. 3. Bring water to a boil, add some salt, and blanch (cook briefly in boiling water) the snow peas for 1 minute.
  4. 4. Drain the snow peas, rinse them with cold water, and let them drain well.
  5. 5. Wash the bell pepper, halve it, remove the core, and cut it into cubes.
  6. 6. Wash the zucchini and cut it into small pieces.
  7. 7. Peel the garlic and ginger and chop them finely.
  8. 8. Heat oil in a wok and sauté the garlic and ginger in it.
  9. 9. Cut the tofu into 1.5 cm cubes.
  10. 10. Add the tofu and the rest of the vegetables to the wok.
  11. 11. Fry everything, turning occasionally.
  12. 12. Season the mixture with soy sauce and oyster sauce.
  13. 13. Season with pepper to taste.
  14. 14. Serve the dish on plates.
  15. 15. Serve rice on the side if desired.
