🍽️ Fresh Quinoa Vegetable Salad

Ingredients
- 100 g red quinoa
- 100 g white quinoa
- 50 g black quinoa
- salt
- 2 red onions
- 2 spring onions
- 0.5 cucumber
- 1 unwaxed lemon
- 5 sprigs flat-leaf parsley
- 5 sprigs mint
- 30 ml olive oil
- salt
- freshly ground pepper
Instructions
- 1. Rinse the quinoa in a fine mesh sieve under hot water.
- 2. Place the quinoa in a pot with about 500 milliliters of boiling salted water.
- 3. Reduce the heat to low and cover the pot.
- 4. Let the quinoa simmer gently for about 12 minutes.
- 5. Remove the pot from the heat and let the quinoa swell for another 10 minutes covered.
- 6. Set the quinoa aside to cool down.
- 7. Peel the red onions and dice them into small cubes.
- 8. Trim the spring onions, wash them, and slice them into small rings.
- 9. Peel the cucumber and cut it into cubes as well.
- 10. Wash the lemon and dry it.
- 11. Use a zester to remove the lemon peel in fine strips.
- 12. Squeeze the juice out of the lemon.
- 13. Wash the herbs and shake them dry.
- 14. Chop the herbs finely.
- 15. Mix all prepared ingredients with the olive oil.
- 16. Season the salad with salt and pepper to taste.
- 17. Serve the salad immediately.
