  1. 1. Rinse the quinoa in a fine mesh sieve under hot water.
  2. 2. Place the quinoa in a pot with about 500 milliliters of boiling salted water.
  3. 3. Reduce the heat to low and cover the pot.
  4. 4. Let the quinoa simmer gently for about 12 minutes.
  5. 5. Remove the pot from the heat and let the quinoa swell for another 10 minutes covered.
  6. 6. Set the quinoa aside to cool down.
  7. 7. Peel the red onions and dice them into small cubes.
  8. 8. Trim the spring onions, wash them, and slice them into small rings.
  9. 9. Peel the cucumber and cut it into cubes as well.
  10. 10. Wash the lemon and dry it.
  11. 11. Use a zester to remove the lemon peel in fine strips.
  12. 12. Squeeze the juice out of the lemon.
  13. 13. Wash the herbs and shake them dry.
  14. 14. Chop the herbs finely.
  15. 15. Mix all prepared ingredients with the olive oil.
  16. 16. Season the salad with salt and pepper to taste.
  17. 17. Serve the salad immediately.
