  6. 6. Remove the broccoli from the hot water immediately.
  7. 7. Rinse the broccoli with cold water to cool it down.
  8. 8. Let the broccoli drain well.
  9. 9. Peel the carrots.
  10. 10. Cut the carrots into very thin strips.
  11. 11. Remove the hard stalks from the cabbage.
  12. 12. Wash the cabbage.
  13. 13. Grate the cabbage into fine strips.
  14. 14. Cut the cress from the stems.
  15. 15. Place the cress briefly in boiling water.
  16. 16. Rinse the cress immediately with cold water.

  18. 18. Place the prepared vegetable strips in the center of the lettuce leaves.
