🍲 Hearty Beef and Vegetable Stew

Ingredients
- 600 g beef (from the rib; boneless)
- 400 g carrots
- 400 g potatoes
- 1 stalk leek
- 1 shallot
- 2 tbsp butter
- 800 ml vegetable broth
- salt
- pepper
- 0.5 bunch parsley (10 g)
Instructions
- 1. Rinse the meat under running water and pat it dry with a kitchen towel.
- 2. Remove any visible sinews from the meat.
- 3. Cut the meat into bite-sized cubes.
- 4. Peel the carrots and the potatoes.
- 5. Wash the peeled vegetables.
- 6. Slice the carrots into round slices.
- 7. Cut the potatoes into small cubes.
- 8. Slice the leek lengthwise.
- 9. Rinse the leek under running water to remove any sand.
- 10. Cut the leek into thin rings.
- 11. Peel the shallot.
- 12. Finely chop the shallot.
- 13. Heat the butter in a large pot.
- 14. Fry the meat in batches until browned.
- 15. Add the prepared vegetables and the shallot to the pot.
- 16. Sauté the vegetables briefly until fragrant.
- 17. Deglaze the mixture with the broth.
- 18. Season the stew with salt and pepper.
- 19. Simmer the stew over medium heat with the lid closed for about 1 hour.
- 20. Taste the stew and adjust the seasoning if necessary.
- 21. Wash the parsley.
- 22. Shake the parsley dry.
- 23. Chop the parsley leaves.
- 24. Sprinkle the finished stew with the parsley.
- 25. Serve the stew hot.
