🍽️ Celery Platter with Savory Vegetable Relish

Ingredients
- 500 g celeriac (1 celeriac)
- 125 ml classic vegetable broth
- 200 g small zucchini (1 small zucchini)
- 50 g onions (1 onion)
- 1 clove of garlic
- 1 red chili pepper
- 2 dried tomatoes (without oil)
- 4 pitted green olives
- salt
- pepper
- 2 tsp white wine vinegar
- 1 tsp olive oil
Instructions
- 1. Wash the celery thoroughly.
- 2. Cut the celery into four slices of equal thickness.
- 3. Peel the outer skin from the celery slices.
- 4. Pour the vegetable broth into a large pot.
- 5. Bring the broth to a boil.
- 6. Place the celery slices into the boiling broth.
- 7. Cover the pot with a lid.
- 8. Cook the celery for ten minutes over medium heat.
- 9. Wash the zucchini in the meantime.
- 10. Cut the zucchini into small cubes of about five millimeters.
- 11. Peel the onion.
- 12. Peel the garlic clove.
- 13. Dice the onion finely.
- 14. Dice the garlic finely.
- 15. Wash the chili pepper.
- 16. Remove the stems and the inside of the chili pepper.
- 17. Finely chop the chili pepper.
- 18. Cut the dried tomatoes into thin strips.
- 19. Remove the celery slices from the broth using a slotted spoon.
- 20. Place the celery slices on two large plates.
- 21. Keep the plates with the celery warm.
- 22. Add the diced onion to the hot broth.
- 23. Add the chopped chili to the broth.
- 24. Add the diced garlic to the broth.
- 25. Add the tomato strips to the broth.
- 26. Cover the pot again.
- 27. Sauté the vegetables over medium heat for eight to ten minutes.
- 28. Slice the olives into rings.
- 29. Add the olive rings to the pot.
- 30. Add the zucchini cubes to the pot.
- 31. Cook the vegetables for another two to three minutes.
- 32. Season the relish with salt.
- 33. Season the relish with pepper.
- 34. Season the relish with vinegar.
- 35. Season the relish with olive oil.
- 36. Place the finished relish on top of the celery slices.
- 37. Serve the dish immediately.
