  2. 2. Cut the celery into four slices of equal thickness.
  3. 3. Peel the outer skin from the celery slices.
  4. 4. Pour the vegetable broth into a large pot.
  5. 5. Bring the broth to a boil.
  6. 6. Place the celery slices into the boiling broth.
  7. 7. Cover the pot with a lid.
  8. 8. Cook the celery for ten minutes over medium heat.
  9. 9. Wash the zucchini in the meantime.
  10. 10. Cut the zucchini into small cubes of about five millimeters.
  11. 11. Peel the onion.
  12. 12. Peel the garlic clove.
  13. 13. Dice the onion finely.
  14. 14. Dice the garlic finely.
  15. 15. Wash the chili pepper.
  16. 16. Remove the stems and the inside of the chili pepper.
  17. 17. Finely chop the chili pepper.
  18. 18. Cut the dried tomatoes into thin strips.
  19. 19. Remove the celery slices from the broth using a slotted spoon.
  20. 20. Place the celery slices on two large plates.
  21. 21. Keep the plates with the celery warm.
  22. 22. Add the diced onion to the hot broth.
  23. 23. Add the chopped chili to the broth.
  24. 24. Add the diced garlic to the broth.
  25. 25. Add the tomato strips to the broth.
  26. 26. Cover the pot again.
  27. 27. Sauté the vegetables over medium heat for eight to ten minutes.
  28. 28. Slice the olives into rings.
  29. 29. Add the olive rings to the pot.
  30. 30. Add the zucchini cubes to the pot.
  31. 31. Cook the vegetables for another two to three minutes.
  32. 32. Season the relish with salt.
  33. 33. Season the relish with pepper.
  34. 34. Season the relish with vinegar.
  35. 35. Season the relish with olive oil.
  36. 36. Place the finished relish on top of the celery slices.
  37. 37. Serve the dish immediately.
