🍽️ Quick Vegetable Ragout with Lime and Mint

Ingredients
- 1 onion
- 250 ml classic vegetable broth
- 300 g fine green beans (princess beans; frozen)
- 300 g young peas (frozen)
- 50 g Grana Padano
- 0.5 lime
- 0.5 bunch mint
- 125 ml soy cream
- salt
- pepper
- 350 g pasta (e.g. macaroni)
Instructions
- 1. Peel the onion and cut it into small cubes.
- 2. Bring the vegetable broth to a boil in a pot.
- 3. Add the diced onion and the frozen green beans to the pot.
- 4. Bring the mixture back to a boil.
- 5. Let the vegetables simmer gently for 4 minutes.
- 6. Stir the frozen peas into the vegetables.
- 7. Let the mixture come to a boil again.
- 8. Continue cooking everything for about 3 minutes.
- 9. The vegetables should be cooked but still slightly firm to the bite.
- 10. Grate the cheese finely.
- 11. Squeeze the juice from half a lime.
- 12. Wash the mint and shake it dry.
- 13. Pluck the mint leaves from the stems.
- 14. Set aside a few leaves for garnishing.
- 15. Finely chop the rest of the mint.
- 16. Add the soy cream and the grated cheese to the vegetables.
- 17. Heat everything for 1 minute.
- 18. Stir in the chopped mint.
- 19. Season the ragout with 2 to 3 tablespoons of lime juice.
- 20. Add salt and pepper to taste.
- 21. Sprinkle the finished dish with the remaining mint leaves.
- 22. Serve the ragout immediately.
