  1. 1. Peel the onion and cut it into small cubes.
  2. 2. Bring the vegetable broth to a boil in a pot.
  3. 3. Add the diced onion and the frozen green beans to the pot.
  4. 4. Bring the mixture back to a boil.
  5. 5. Let the vegetables simmer gently for 4 minutes.
  6. 6. Stir the frozen peas into the vegetables.
  7. 7. Let the mixture come to a boil again.
  8. 8. Continue cooking everything for about 3 minutes.
  9. 9. The vegetables should be cooked but still slightly firm to the bite.
  10. 10. Grate the cheese finely.
  11. 11. Squeeze the juice from half a lime.
  12. 12. Wash the mint and shake it dry.
  13. 13. Pluck the mint leaves from the stems.
  14. 14. Set aside a few leaves for garnishing.
  15. 15. Finely chop the rest of the mint.
  16. 16. Add the soy cream and the grated cheese to the vegetables.
  17. 17. Heat everything for 1 minute.
  18. 18. Stir in the chopped mint.
  19. 19. Season the ragout with 2 to 3 tablespoons of lime juice.
  20. 20. Add salt and pepper to taste.
  21. 21. Sprinkle the finished dish with the remaining mint leaves.
  22. 22. Serve the ragout immediately.
