🍽️ Vegetable Turkey Pan with Spätzle

Ingredients
- 400 g flour
- salt
- 4 eggs
- nutmeg
- 200 ml milk
- 2 tbsp butter
- 1 onion
- 2 carrots
- 200 g green beans
- 200 g smoked turkey breast fillet (thick slices)
- 150 g white cabbage
- salt
- pepper (from the mill)
- 80 g butter
Instructions
- 1. Bring plenty of salted water to a boil in a large pot.
- 2. Quickly mix flour, eggs, nutmeg, milk, and a pinch of salt in a bowl to form a firm dough.
- 3. Immediately scrape the dough into the boiling water using a spätzle scraper or a knife from a wet board.
- 4. Let the spätzle cook for a few minutes until they float to the surface.
- 5. Remove the spätzle from the water with a slotted spoon and let them drain.
- 6. Alternatively, prepare the spätzle according to the package instructions.
- 7. Peel the carrots and cut them into batons.
- 8. Peel the onion and dice it.
- 9. Cut the white cabbage into small squares.
- 10. Wash, trim, and cut the beans into pieces about 2 cm long.
- 11. Cut the turkey breast into small cubes.
- 12. Blanch the beans for about 7 minutes in boiling salted water.
- 13. Drain the beans, shock them with cold water, and let them drain.
- 14. Heat butter in a large pan.
- 15. Sauté the onions in it until translucent.
- 16. Add the remaining vegetables and sauté for 5 minutes while stirring.
- 17. Add the spätzle and fry for another 5 minutes.
- 18. Stir in the turkey cubes and let them heat through.
- 19. Season with salt and pepper and serve the dish.
