🍽️ Crispy Vegetable Sticks with Fresh Ketchup

Ingredients
- 1 kg mixed colorful vegetables (e.g. purple, firm-cooking potatoes, sweet potatoes, colorful carrots, celeriac, red

- 2 sprigs thyme
- 4 tbsp olive oil
- pepper
- 150 g apples (1 small apple)
- 1 small onion (40 g)
- 80 g tomato paste
Instructions
- 1. Wash the vegetables thoroughly and peel them.
- 2. Cut the vegetables into sticks about the thickness of your finger.
- 3. Boil the sticks in salted boiling water for two minutes.
- 4. Remove the sticks from the water immediately.
- 5. Rinse them briefly with cold water.
- 6. Pat the sticks dry with a cloth.
- 7. Wash the thyme and shake it dry.
- 8. Pluck the small thyme leaves from the stems.
- 9. Mix the vegetable sticks with three tablespoons of oil.
- 10. Add the thyme leaves.
- 11. Season everything with salt and pepper.
- 12. Spread the mixture on a baking sheet lined with baking paper.
- 13. Preheat the oven to 180 degrees Celsius (convection 160 degrees Celsius or gas level 2 to 3).
- 14. Bake the sticks for 30 minutes until golden brown.
- 15. Turn the sticks halfway through the baking time.
- 16. Increase the temperature to 220 degrees Celsius for the last five minutes.
- 17. Peel an apple and wash it.
- 18. Quarter the apple and remove the core.
- 19. Peel an onion.
- 20. Chop the apple and onion finely.
- 21. Heat the remaining oil in a pot.
- 22. Sauté the onion and apple for five minutes over medium heat.
- 23. Stir in tomato paste and two to three tablespoons of water.
- 24. Season the mixture with salt and pepper.
- 25. Let the mixture simmer for five minutes.
- 26. Puree the mixture finely using a hand blender.
- 27. Serve the vegetable fries together with the ketchup.
