  1. 1. Wash the vegetables thoroughly and peel them.
  2. 2. Cut the vegetables into sticks about the thickness of your finger.
  3. 3. Boil the sticks in salted boiling water for two minutes.
  4. 4. Remove the sticks from the water immediately.
  5. 5. Rinse them briefly with cold water.
  6. 6. Pat the sticks dry with a cloth.
  7. 7. Wash the thyme and shake it dry.
  8. 8. Pluck the small thyme leaves from the stems.
  9. 9. Mix the vegetable sticks with three tablespoons of oil.
  10. 10. Add the thyme leaves.
  11. 11. Season everything with salt and pepper.
  12. 12. Spread the mixture on a baking sheet lined with baking paper.
  13. 13. Preheat the oven to 180 degrees Celsius (convection 160 degrees Celsius or gas level 2 to 3).
  14. 14. Bake the sticks for 30 minutes until golden brown.
  15. 15. Turn the sticks halfway through the baking time.
  16. 16. Increase the temperature to 220 degrees Celsius for the last five minutes.
  17. 17. Peel an apple and wash it.
  18. 18. Quarter the apple and remove the core.
  19. 19. Peel an onion.
  20. 20. Chop the apple and onion finely.
  21. 21. Heat the remaining oil in a pot.
  22. 22. Sauté the onion and apple for five minutes over medium heat.
  23. 23. Stir in tomato paste and two to three tablespoons of water.
  24. 24. Season the mixture with salt and pepper.
  25. 25. Let the mixture simmer for five minutes.
  26. 26. Puree the mixture finely using a hand blender.
  27. 27. Serve the vegetable fries together with the ketchup.
