🍽️ Green Paella with Tofu, Roasted Bell Peppers, Peas, and Zucchini

Ingredients
- 1 onion
- 2 garlic cloves
- 2 zucchini
- 400 g broccoli
- 3 tbsp olive oil
- 250 g paella rice
- 150 g peas (frozen or fresh peeled)
- 800 ml vegetable broth
- 2 pinch saffron threads
- 2 level tsp sweet paprika powder
- 0.25 tsp dried thyme
- 400 g tofu
- 3 tbsp soy sauce
- 1 tbsp agave syrup
- 300 g green bell pepper (frying pepper, pimientos)
- salt
- pepper
- 1 bunch parsley (20 g each)
- 1 organic lemon
Instructions
- 1. Peel the onion and the garlic.
- 2. Finely chop the onion and garlic.
- 3. Wash the zucchini.
- 4. Trim the ends of the zucchini.
- 5. Cut the zucchini into small cubes.
- 6. Wash the broccoli.
- 7. Divide the broccoli into small florets.
- 8. Heat two tablespoons of oil in a paella pan or a large frying pan.
- 9. Add the onion and garlic to the pan.
- 10. Fry the onion and garlic for four minutes over medium heat.
- 11. Add the rice to the pan.
- 12. Add the zucchini to the pan.
- 13. Add the broccoli to the pan.
- 14. Stir everything well.
- 15. Simmer the mixture for about five minutes over medium heat.
- 16. Add the peas to the pan.
- 17. Pour the hot vegetable broth over everything.
- 18. Crush the saffron threads in a mortar.
- 19. Add the crushed saffron to the pan.
- 20. Add the paprika powder to the pan.
- 21. Add the thyme to the pan.
- 22. Let the mixture simmer for about ten minutes over low heat.
- 23. Stir occasionally.
- 24. Stop stirring when the broth has been almost completely absorbed by the rice.
- 25. Cut the tofu into cubes.
- 26. Mix the tofu with soy sauce.
- 27. Mix the tofu with agave syrup.
- 28. Let the tofu mixture marinate for five minutes.
- 29. Wash the bell pepper.
- 30. Remove the inside of the bell pepper.
- 31. Heat the remaining oil in a pan.
- 32. Roast the bell pepper for five minutes over medium heat.
- 33. Season the bell pepper with salt.
- 34. Remove the bell pepper from the pan.
- 35. Fry the tofu cubes in the same pan for five minutes over high heat.
- 36. Season the tofu cubes with salt.
- 37. Season the tofu cubes with pepper.
- 38. Season the paella with salt.
- 39. Season the paella with pepper.
- 40. Wash the parsley.
- 41. Shake the parsley dry.
- 42. Chop the parsley.
- 43. Stir half of the parsley into the paella.
- 44. Decoratively arrange the tofu on top of the paella.
- 45. Decoratively arrange the bell pepper on top of the paella.
- 46. Rinse the lemon under hot water.
- 47. Dry the lemon.
- 48. Cut the lemon into eighths.
- 49. Serve the tofu paella with the lemon wedges.
