  7. 7. Divide the broccoli into small florets.
  8. 8. Heat two tablespoons of oil in a paella pan or a large frying pan.
  9. 9. Add the onion and garlic to the pan.
  10. 10. Fry the onion and garlic for four minutes over medium heat.
  11. 11. Add the rice to the pan.
  12. 12. Add the zucchini to the pan.
  13. 13. Add the broccoli to the pan.
  14. 14. Stir everything well.
  15. 15. Simmer the mixture for about five minutes over medium heat.
  16. 16. Add the peas to the pan.
  17. 17. Pour the hot vegetable broth over everything.
  18. 18. Crush the saffron threads in a mortar.
  19. 19. Add the crushed saffron to the pan.
  20. 20. Add the paprika powder to the pan.

  22. 22. Let the mixture simmer for about ten minutes over low heat.

  29. 29. Wash the bell pepper.
  30. 30. Remove the inside of the bell pepper.
  31. 31. Heat the remaining oil in a pan.
  32. 32. Roast the bell pepper for five minutes over medium heat.
  33. 33. Season the bell pepper with salt.
  34. 34. Remove the bell pepper from the pan.
  35. 35. Fry the tofu cubes in the same pan for five minutes over high heat.
  36. 36. Season the tofu cubes with salt.
  37. 37. Season the tofu cubes with pepper.
  38. 38. Season the paella with salt.
  39. 39. Season the paella with pepper.
  40. 40. Wash the parsley.
  41. 41. Shake the parsley dry.
  42. 42. Chop the parsley.
  43. 43. Stir half of the parsley into the paella.
  44. 44. Decoratively arrange the tofu on top of the paella.
  45. 45. Decoratively arrange the bell pepper on top of the paella.
  46. 46. Rinse the lemon under hot water.
  47. 47. Dry the lemon.
  48. 48. Cut the lemon into eighths.
  49. 49. Serve the tofu paella with the lemon wedges.
