🍽️ Crispy Flatbread with Mozzarella and Vegetables

Ingredients
- 500 g flour
- 1 cube fresh yeast
- 250 ml lukewarm water
- 3 tbsp olive oil
- 1 tsp salt
- 2 bunch basil
- 1 clove garlic
- 3 tbsp pine nuts
- 80 ml olive oil
- 150 g mozzarella (sliced)
- 40 olives (chopped black)
- 2 artichoke hearts (from the can, sliced thinly)
- 2 sun-dried tomatoes (in oil)
- salt
- 0.5 bunch basil
- olive oil (for brushing)
Instructions
- 1. Dissolve the yeast in lukewarm water.
- 2. Sift the flour into a large bowl.
- 3. Pour the yeast solution onto the flour.
- 4. Add the olive oil and the salt.
- 5. Knead the ingredients into a smooth dough using the dough hooks of a hand mixer.
- 6. Let the dough rise in a warm place for 45 minutes.
- 7. Knead the dough thoroughly again after it has risen.
- 8. Roll out the dough on a lightly floured surface to a thickness of about two fingers.
- 9. Brush the surface of the dough with olive oil.
- 10. Sprinkle some salt over the oil.
- 11. Preheat the oven to 200 degrees Celsius.
- 12. Bake the flatbread for about 20 minutes in the preheated oven.
- 13. Remove the bread from the oven and let it cool completely.
- 14. Cut the cooled flatbread crosswise into two halves.
- 15. Put the basil leaves, pine nuts, and garlic into a blender.
- 16. Puree the ingredients into a paste.
- 17. Stir the olive oil into the paste.
- 18. Season the pesto generously with salt and pepper.
- 19. Let the tomatoes drain well.
- 20. Cut the tomatoes into strips.
- 21. Spread the pesto on the bottom half of the bread.
- 22. Leave a small border around the edge of the bread.
- 23. Place the tomato strips on the pesto.
- 24. Distribute half of the mozzarella over the tomatoes.
- 25. Place the slices of artichokes on top.
- 26. Add the remaining mozzarella.
- 27. Sprinkle some olives over the filling.
- 28. Cover everything with a layer of fresh basil leaves.
- 29. Place the second half of the bread on top.
- 30. Press the sandwich firmly.
- 31. Cut the sandwich into pieces.
- 32. Serve the pieces.
