🍽️ Vegetable Pan with Chanterelles

Ingredients
- 250 g chanterelles
- 150 g green beans
- 250 g waxy potatoes
- 1 tbsp ghee
- 1 carrot
- 100 g snow peas
- 100 g fresh broad beans
- salt
- pepper (from the mill)
- 1 tsp herbs de Provence
Instructions
- 1. Clean the mushrooms carefully. Cut large mushrooms into bite-sized pieces, but leave small mushrooms whole.
- 2. Wash the beans and remove the tough ends.
- 3. Bring water to a boil and add some salt.
- 4. Add the beans to the boiling water and cook them for 6 minutes.
- 5. Remove the beans from the water.
- 6. Place the beans in a bowl of ice water to cool them down immediately.
- 7. Let the beans drain well.
- 8. Peel the potatoes.
- 9. Cut the potatoes into small cubes.
- 10. Heat ghee (clarified butter) in a pan.
- 11. Fry the potato cubes in the pan over medium heat for about 10 minutes.
- 12. Turn the potatoes occasionally so they cook evenly.
- 13. Peel the carrots.
- 14. Cut the carrots into thin strips.
- 15. Wash the snow peas.
- 16. Remove the tough strings and ends of the snow peas.
- 17. Cut the snow peas into small pieces.
- 18. Add the cut snow peas and carrot strips to the potatoes in the pan.
- 19. Add the prepared beans and green beans to the pan.
- 20. Fry everything together for another 5 minutes.
- 21. Season the vegetables with salt, pepper, and your favorite herbs.
