  1. 1. Clean the mushrooms carefully. Cut large mushrooms into bite-sized pieces, but leave small mushrooms whole.
  2. 2. Wash the beans and remove the tough ends.
  3. 3. Bring water to a boil and add some salt.
  4. 4. Add the beans to the boiling water and cook them for 6 minutes.
  5. 5. Remove the beans from the water.
  6. 6. Place the beans in a bowl of ice water to cool them down immediately.
  7. 7. Let the beans drain well.
  8. 8. Peel the potatoes.
  9. 9. Cut the potatoes into small cubes.
  10. 10. Heat ghee (clarified butter) in a pan.
  11. 11. Fry the potato cubes in the pan over medium heat for about 10 minutes.
  12. 12. Turn the potatoes occasionally so they cook evenly.
  13. 13. Peel the carrots.
  14. 14. Cut the carrots into thin strips.
  15. 15. Wash the snow peas.
  16. 16. Remove the tough strings and ends of the snow peas.
  17. 17. Cut the snow peas into small pieces.
  18. 18. Add the cut snow peas and carrot strips to the potatoes in the pan.
  19. 19. Add the prepared beans and green beans to the pan.
  20. 20. Fry everything together for another 5 minutes.
  21. 21. Season the vegetables with salt, pepper, and your favorite herbs.
